Crockpot Chicken Ranch Tacos
This dinner is definitely a game changer. Chicken sprinkled with tasty fajita seasoning and sliced baby red potatoes sprinkled with a touch of ranch dressing seasoning.
Small amounts of two of our favorite seasonings and both with a large amount or flavor. The best thing about this dinner is it can actually be two dinners!
The chicken meat is so tasty and tender – just perfect for tacos. Soft chicken tacos or hard tacos, both are delicious and simple to prepare.
The second dinner is a simple dinner of chicken, potatoes and a green vegetable. Both are perfect for a busy night when you definitely have NO TIME to cook.

Game Changing Dinner Recipe using Your Crockpot
- 1-1/4 boneless chicken breasts
- 1/2 tablespoon olive oil
- 1 tablespoon dried fajita seasoning
- 1/2 tablespoon dried ranch seasoning
- 1 tablespoon butter, divided into small pieces
- 1-1/2 lbs. small baby red potatoes, cut in half
- Flour or Corn Tortillas
- Lettuce, Tomato and Cheese for Tacos

Drizzle the oil on the bottom of the crockpot and swirl the chicken in the oil making sure to lightly coat both sides.

Sprinkle chicken with fajita seasoning the same way, making sure to lightly coat both side.

Add the potatoes on top of the chicken and lightly sprinkle with ranch dressing. Some of the dressing should also go on the chicken.

Lay the dabs of butter on top of the potatoes.

Cook on low for 4 hours.

*Always make sure your chicken is cooked through.

Remove chicken and shred with 2 forks. Use meat to make desired tacos.
