Crockpot BBQ and Pineapple Chicken Thighs
One of our favorite chicken thigh dishes is probably one of the easiest dinners you will ever make! We love this simple recipe with tangy BBQ sauce and the sweet and snappy pineapple.
Serve over rice with a side of roasted broccoli for a healthy and delicious dinner. Try a mixture of chicken legs and chicken thighs; both will work just fine for this recipe.

- 2-1/2 lbs. boneless, skinless chicken thighs
- 3/4 cup barbecue sauce
- 1-1/4 cup pineapple slices, drained and chopped (about 5 slices of pineapple)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Lightly salt & pepper chicken thighs and lay them in the bottom of your crockpot.

Pour the barbecue sauce over chicken followed by the pineapple. Stir lightly to combine.

Cook on high for 2-1/2 hours or low for 6 hours.
We like to brown the chicken thighs first in a little bit of oil for that bit of extra flavor. Just heat oil in a skillet and brown the chicken pieces for about 3-4 minutes on each side. Lightly salt and pepper chicken before browning.
