1 – Oven Fried Chicken Legs using Breadcrumbs- Simple Dinner Recipe

Can I use chicken thighs for this recipe? Yes, you can actually use chicken thighs or legs to prepare these recipes; either way the chicken is tender, juicy and baked to perfection.
Chicken legs are always a cheaper dinner option, and even lower in cost if you can find them on sale. The chicken legs and thighs are actually very tasty and one of the best parts of the chicken.
Lightly salt & pepper chicken legs before adding to the casserole dish with butter. Salt and pepper before cooking really brings out the flavor of the chicken. This is a step you don’t want to forget!
Ingredients Needed for Oven Fried Chicken Legs:
- Chicken Legs
- Butter
- Breadcrumbs
- Paprika
- Onion Powder
- Garlic Powder
- Dried Sage

- 8 chicken legs (about 2-1/2 lbs.)
- salt & pepper
- 4 tablespoons butter
- 1/2 cup regular dry breadcrumbs (not panko)
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon dried sage

Preheat oven to 425 degrees. Using the oven, melt the butter in a 9 x 13 casserole dish. Remove dish from the oven when the butter has melted.

Lightly salt & pepper all of the chicken legs.

Mix together the breadcrumbs, spices and salt. Pour the breadcrumbs into a pan or flat dish.

Place chicken pieces in the casserole dish with the melted butter and turn the pieces until they are well coated with the butter.

Dip each chicken leg into the breadcrumb mixture and turn until well coated. Place the chicken leg back into the casserole dish. Do this with each chicken leg.

Let chicken sit on the counter for 15 minutes.

Bake uncovered for 35-40 minutes or until chicken is cooked through.
You only need 4 tablespoons of melted butter to make this recipe work. That’s only 1/2 tablespoon of butter per chicken leg so not a ton of calories. Make sure the chicken pieces are well coated with butter before dipping in the breadcrumb mixture.

Remember – The safe internal temperature for cooked chicken is 165° Fahrenheit.

Ingredients Needed for Oven Fried Chicken Drumsticks
- 3 lbs. mixed chicken thighs and leg
- 4 tablespoons butter
- 1/2 tablespoon dried parsley to sprinkle over chicken
COATING MIXTURE
- 1/2 cup flour
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon dried sage
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 teaspoon marjoram
- 1 teaspoon oregano
How to Make Fried Chicken Legs Baked in the Oven
STEP 1. Preheat oven to 400 degrees.
STEP 2. Place a 9 x 13″ baking dish in the oven for a few minutes to melt the butter.
STEP 3. Mix the flour and all the herbs in a large plastic resealable bag and shake well to blend.
STEP 4. Rinse chicken with cold water and pat dry with a paper towel.
STEP 4. Place chicken in resealable bag one piece at a time. Shake bag until chicken is well coated.
STEP 5. Place chicken in the casserole dish in a single layer.
STEP 6. Bake for 22 minutes and the remove chicken from the oven and turn over. Bake for an additional 22 minutes or until chicken is cooked through.
Notes:
- We’ve have made this awesome easy oven fried chicken recipe for about 10 years, and we have never tired of it. And, it’s just a little more delicious in the summer when you can serve with fresh corn and fresh summer vegetables!
- Original recipes for oven fried chicken can call for a full stick of butter, but this recipe works well with 3-4 tablespoons.

- We use a combination of chicken thighs and chicken legs for this recipe, and it comes out close to 3 lbs. -but you can use a little less. You can also use all chicken legs or all thighs.
