Caprese Chicken Thighs

Tasty Caprese Chicken Thighs are a popular recipe for many reasons. Chicken thighs are always a money-saving part of the chicken and when combined with tomatoes and cheese, this winning recipe has all that is needed for a perfect chicken dish. Find out some great side dish choices for Caprese chicken. 

With a cook time of under 30 minutes, this easy chicken thigh recipe will be on the dinner table quickly! We love easy dinner recipes that are as delicious as easy.

Caprese Chicken Thighs

This easy one-skillet chicken dish is the perfect solution when your garden overflows with cherry tomatoes. It is quick and easy to get on the table on busy summer nights.  Use your favorite small tomatoes like cherry tomatoes or grape tomatoes. You can also use small Roma tomatoes for this recipe.

We do love cooking with chicken thighs and think they are the tastiest part of the chicken.  Chicken thighs are the dark meat of the chicken and tend to be more flavorful than a boneless chicken breast. You can also lightly salt and pepper the chicken as it cooks.

Ingredients needed for Caprese Chicken Thighs:

  • Boneless, skinless chicken thighs
  • Extra virgin olive oil
  • Butter
  • Chicken stock
  • Cherry tomatoes
  • Fresh Mozzarella cheese
  • Italian seasoning
  • Crushed red pepper
  • Fresh basil

Step-by-Step Directions:

STEP 1.  Preheat oven to 425°F.

STEP 2. Heat a large, oven-safe skillet over medium heat. Add 1 tablespoon olive oil.

STEP 3. Combine Italian seasoning and red pepper flakes. Place chicken thighs in a large bowl and drizzle with the remaining olive oil. Sprinkle chicken with one tablespoon Italian seasoning. Season with salt and black pepper, to taste. Toss to evenly coat. Transfer to the hot skillet.

STEP 4.   Cook for 4-5 minutes per side, or until the chicken develops a golden-brown crust. Remove from heat and add butter, chicken stock, and cherry tomatoes.

STEP 5.  Top each chicken thigh with a slice of fresh Mozzarella cheese and sprinkle with remaining Italian seasoning mixture. Season to taste with additional salt, black pepper and red pepper, if using.

STEP 6.  Transfer skillet into pre-heated oven and bake for 15-20 minutes, or until chicken is cooked through and the Mozzarella is melted. Remove from oven and allow chicken to rest for 5 minutes.

STEP 7.   To serve, spoon pan sauce over chicken and top with fresh basil sprigs. Enjoy!

We love this recipe because it’s always fresh and delicious. Buy some savory fresh tomatoes from your farmers market and load up on Vitamin C. If you can’t find fresh mozzarella, then packaged shredded will do in a pinch.  Don’t forget about the fresh basil!
