Mini Meatloaf – Perfect Little Mexican Meatloaves for a Delicious Family Meal!
This little mini meatloaf dinner is so easy to prepare and is one of our favorite meatloaves ever. We use ground turkey for this recipe, but you could easily substitute a lean ground beef as well.
Moist and juicy bites of saucy meatloaf that makes you want to keep this recipe handy for an easy weeknight meal that your family will love.

Delicious little Mexican Mini Meatloaves the whole family will love
- 1 lb. ground turkey
- 3/4 cup breadcrumbs
- 3/4 cup salsa
- 1 small egg
- 1/2 cup cheddar jack cheese
- 3/4 cup salsa
Preheat oven to 350 degrees. Spray a cookie sheet with nonstick spray.
Using a large bowl, mix together the first 4 ingredients.
Carefully shape mixture into 4 meatloaves and place on the baking sheet.
Bake for 35 minutes or until cooked through.
Remove from the oven and spoon additional salsa on top of each loaf. Sprinkle with cheese. Place back in the oven for 5 minutes.
Meatloaf is a simple recipe to prepare and leftovers heat up nicely. This is an easy recipe for a weeknight meal because it only has a few ingredients and the cooking time is much shorter than a regular size meatloaf.
Use extra salsa and cheese to top your meatloaf if you wish! Save extra salsa for any leftovers you may want to heat up for lunch the next day.
