This little mini meatloaf dinner is so easy to prepare and is one of our favorite meatloaves ever. We use ground turkey for this recipe, but you could easily substitute a lean ground beef as well.

How to Make Turkey Mini Meatloaf
STEP 1. Preheat oven to 350 degrees. Spray a cookie sheet with nonstick spray.
STEP 2. Using a large bowl, mix together the first 4 ingredients.
STEP 3. Carefully shape mixture into 4 meatloaves and place on the baking sheet.
STEP 4. Bake for 35 minutes or until cooked through.
STEP 5. Remove from the oven and spoon additional salsa on top of each loaf. Sprinkle with cheese. Place back in the oven for 5 minutes.
