Rice and Green Peas
If you are stumped for a healthy side dish recipe, make a quick batch of rice and green peas! This dish is healthy and kid friendly.
Green peas are nutritious and a good source of fiber, vitamin B1, folate, vitmain C and magnesium to name a few goodies.
Bags of frozen green peas are cheap and plentiful, so always keep a few in your freezer. Green peas are perfect additions to many rice dishes, soups, stews, salads and are delicious plain with a little salt, pepper and butter.
We like to make our rice with chicken broth or a little soup base – either works fine. The soup base will save you money if you enjoy cooking your rice in a chicken or beef flavored broth.

Make this tasty and healthy rice with added green peas! Kid friendly.
- 2 cups chicken broth
- 1 cup white rice, uncooked
- 1/4 teaspoon salt
- 1 cup frozen green peas, thawed
- 2 tablespoons Parmesan cheese
- 1/4 cup shredded cheddar cheese

In a medium sauce pan with a tight fitting lid, bring the chicken broth and salt to a boil.

Stir in the rice; reduce heat and cover the pan with a lid.

Cook for about 16-18 minutes.

Remove from heat and stir in green peas and Parmesan cheese. Let sit covered for 4-5 minutes.

Fluff with a fork and top with cheddar cheese.
Green peas make a nice nutritious addition to rice plus add a little extra fiber – add a little cheese and kids will gobble it up!
Green peas are a great source of fiber with about 7 grams per cup. Plus, peas contain healthy antioxidants which are necessary for a healthy body.
If you are pressed for time, add thawed peas to your minute rice. Cook the minute rice in broth instead of water and just toss in the peas and cheese. Let sit for a few minutes before serving.
