It’s so easy to make a delicious salmon salad with mayo that is healthy and lower in calories. If you are looking to lower your calories count use a lower fat mayonnaise or think about making your own healthy  Mayonnaise Using Olive Oil

A Simple Salmon Salad with Mayo

Sometimes, something simple, healthy and delicious is just what you need for lunch.  This salmon salad is packed with protein and nutrients for a healthy lunch that also travels well.

We do love our tuna salad, and you can also see that we make the best tuna salad ever, with lots of eggs and crunchy celery!

But, there are days when only a quick salmon salad will do. Keep either pouches or cans of salmon in your pantry and you will always have a quick and easy lunch.

Why salmon for a salad? Salmon is actually a little more nutritious that tuna! Salmon has about 24 grams of protein and actually more omega-3 good fat and vitamin E than tuna fish. So change things up a bit and try this yummy salmon salad with mayo!

We love this simple salmon salad made with mayonnaise and crunchy celery.

Ingredients
  • 1 15 oz. can of salmon
  • 2 large hard boiled eggs, chopped
  • 1 stalk fresh celery, diced
  • 1/2 cup of mayonnaise
  • 1 teaspoon Dijon mustard
  • sprinkle of salt & pepper
Instructions
  1. Add the mayo and mustard to a medium bowl and mix using a fork.

  2. Add the chopped egg and celery to the bowl and mix. Lightly salt and pepper.

  3. Add the salmon to the chopped egg mixture and mix again.

  4. Add a little bit more of salt & pepper and more mayo if needed.

Serve On a Bed of Romaine Lettuce!

You might just think of lettuce as being boring and bland, but that is far from the truth.  Romaine lettuce in particular is a very healthy addition to any salad. Romaine lettuce along with the salmon is also a great source of folic acid, vitamin A and C.
