Crispy on the outside and soft and savory on the inside. Yum! We also add just a little Parmesan cheese at times to the mix. About 1 tablespoon of shredded Parmesan cheese is all you need.
If you've never made salmon patties using canned salmon before, you are in for a delicious treat.
- 1 (14.75 oz.) can salmon
- 1/2 cup regular breadcrumbs plus a little more for dusting
- 2 eggs, lightly beaten with the mustard
- 2 teaspoons Dijon mustard
- 1/2 teaspoon onion powder
- 2 tablespoons butter
- 2 tablespoons oil
Drain liquid from the salmon and gently remove any bones or skin. Combine salmon, breadcrumbs, mustard, onion powder, eggs, salt, and pepper.
- Form salmon mixture into 4 patties.
- Melt butter and oil in a large skillet.
- Brown salmon patties on both sides (about 4 minutes per side).
We like to empty the fish into a strainer and pick through with our fingers. Remove any skin or bones. Tip – Mix the patty ingredients together but leave the bowl to chill in the refrigerator for about 10 minutes before forming the patties.
Form 4 patties and lightly dust with a little additional breadcrumbs before frying.
Let the salmon patties fry until you have a nice crispy coating on the outside. Always let the oil heat up before dropping the patties in the pan.
Serve with lemon wedges and a fresh homemade dill sauce.
Fresh Dill Sauce for Salmon Patties – Mix together 2/3 cup sour cream, 1/2 cup mayonnaise, 1 teaspoon sugar, 1/4 teaspoon salt, 1 tablespoons fresh chopped dill leaves.
