Growing up in the outreaches of Pittsburgh, Pennsylvania, most weekends consisted of the cry for Mom’s “Dippy Eggs.”
If you also got a side of bacon or sausage you were very lucky. Typically it was a plate of “dippy eggs” with white toast and butter, and boy that was considered the perfect breakfast.
If you buy good eggs from a trusted source, you can still eat “dippy eggs” for your weekend breakfast without worry of under cooked eggs.

How to Make the Best Dippy Eggs
- 2 eggs
- oil
- butter
- salt & pepper
Use a good skillet that has a non-stick surface for better results. Lightly oil the bottom of the skillet using your favorite oil. In this case, we used sunflower oil and a little butter.
Turn the heat to about medium.
Gently crack each egg on your kitchen counter and break open the shell as you are over the pan. Hold your hands close to the skillet to prevent breaking the yolk. (We can’t make “dippy eggs” with broken yolks!)
You may want to practice cracking your eggs into a small dish and adding them one by one to the skillet. Keep your heat at medium to medium-low and careful not to burn.
Lightly salt & pepper the eggs.
Cover the eggs with a lid and let cook for about 2 minutes.
Slide the eggs from the pan right onto the plate. Butter your toast and enjoy those delicious eggs!
So that’s how you make the famous Pittsburgh eggs that were so popular for weekend breakfast. Eggs are always a low-cost and healthy way to enjoy the start of the day so make some “dippy eggs” this weekend and enjoy!
