Learn how to make over medium eggs for a delicious start to the day. An over-medium egg is when the whites are firm but the yolk is still a bit runny. Over-medium eggs are cooked on both sides of the egg. Achieving the ideal balance between a runny yolk and a fully cooked white can be a challenge, but with the right technique, it’s absolutely possible every time!

Over-medium eggs are perfect for the fried egg lovers that want a firmer egg but still have a bit of a runny egg to dip that toast in.  Perfect egg choice for those that want a plate of eggs that you can dip your toast into but not overly runny yolks like the sunny side up egg.

The over-medium cooked eggs are typically eaten with a side of buttered toast.

What is an Over-Medium Egg?

An over-medium egg is a fried egg that is cooked on one side of the egg and then flipped and cooked on the other side of the egg until the egg is cooked though with no runny parts of the egg.

How to Make Over Medium Eggs –

Over Medium Egg Recipe:

  • 2 eggs – always buy organic eggs if possible
  • 1 tablespoon  butter – we love to use salted butter
  • salt & pepper – never miss this step of seasoning your eggs
  1. Heat an 8 inch, nonstick skillet over medium heat for about 1 minute.
  2. Add butter to the skillet. Using your spatula, spread melting butter over the bottom of the pan to coat evenly so the eggs won’t stick.
  3. Crack your eggs one at a time into a small bowl and then gently slide them into the skillet. You can also carefully crack the eggs directly into the skillet. Just tap each egg lightly on your counter top until a slight crack forms and then use your fingers to crack the egg the rest of the way open.
  4. Lightly salt and pepper eggs.
  5. Cook eggs for about 2-1/2 to 3 minutes or until the whites of the egg are set.
  6. Carefully flip the eggs separately and cook for about 1 minutes longer.

Melt butter in an 8-inch nonstick skillet over medium heat. Crack 2 eggs gently into the skillet. Lightly salt and pepper eggs. Cook eggs for a few minutes until the whites start to get firm and less opaque. Don’t be tempted to turn the heat up too high.

Using the thin end of your spatula, carefully divide the eggs into 2 separate eggs.

Over medium eggs are flipped – Gently flip eggs and continue cooking for about 1 minute. You can add a little more salt & pepper as they cook if desired.

Over-Medium Eggs have runny yolks. How runny your yolk will be depends on how long you cook the flipped side.

Fried Egg Tips –  Here are some of our tips for making perfect fried eggs:

  • Use a flat spatula with a thinner top to make it easier to get underneath each egg to flip. Always use a spatula to carefully remove the eggs from the pan.
  • You can use oil instead of butter if desired. The outside edges of the egg whites may be a little crisper.
  • Keep an eye on the white part of the egg as it’s cooking. The more white the outer part of the egg becomes, the more it is cooked through.
  • Always use a quality non-stick pan: A non-stick pan will make it easier to cook your eggs and prevent them from sticking to the pan.
  • Use low to medium heat: Using low to medium heat will prevent your eggs from burning or overcooking. This also allows the egg whites to cook slowly and evenly.
  • Add butter or oil: Adding a small amount of butter or oil to the pan will help prevent the eggs from sticking and add flavor.
  • Always crack the eggs gently if they are going to go directly into the skillet. Crack the eggs gently to avoid breaking the yolks.
  • Always season the eggs before they cook. Season your eggs with salt and pepper to taste.
  • Cover the pan – Covering the pan with a lid or plate will help the eggs cook more evenly and faster.
  • Baste the eggs – Basting the eggs with hot oil or butter can help cook the top of the eggs and prevent them from being too runny.

How Long Should You Cook an Over-Medium Egg?

For a firm white and runny yolks cook about 2-1/2 to 3 minutes for the first side, flip and cook about 1 minute longer on the other side. This time could vary a little bit depending on how high your heat is turned up and how large your skillet is. For 2 eggs try and stick with using a nonstick 8-inch skillet.

What To Serve with Over-Medium Cooked Eggs?

Buttered Toast – Sourdough bread makes great toast for eggs.
Fried Fresh Tomato Slices – Slice fresh tomatoes and lightly salt & pepper. Cook in butter on both sides.
Cooked Meats – Serve a side of Cooked Sausage, bacon or ham slices. Canadian bacon works well too.

Fresh Fruit – Sliced strawberries and blueberries mixed is a great combination.

Over Medium: Egg is flipped and cooked on both sides and the yolk part is just a little runny.
Over Hard Eggs: Egg is flipped, and the yolk is cooked and not runny. The yolk is firm or hard.
Sunny Side up Eggs: Egg is cooked only on one side and is not flipped. Typically the yolk is runny.
