Easy Chicken Pot Pie Recipe with Cream of Chicken Soup

Classic recipe of truly comforting baked chicken pot pie that is simple to prepare and will be loved by your family. Easy recipe for a quick weeknight meal.

Ingredients Needed for Easy Chicken Pot Pie:

  • 1 can Refrigerated Biscuits (8 count)
  • Shredded Chicken
  • Frozen Peas and Carrots
  • Butter – salted butter
  • 1 can Cream of Mushroom Soup
  • 1 can Cream of Chicken Soup
  • Milk– we use whole milk
  • Salt and pepper

Simple Baked Pot Pie Instructions:

  1. Preheat your oven to 375 degrees.
  2. Place the biscuits on a parchment lined baking sheet. Bake for only 8 minutes and remove.
  3. Melt the butter over medium heat in a saucepan and add in the peas and carrot. Sauté until defrosted.
  4. In a large mixing bowl, whisk together the cream of mushroom soup, cream of chicken soup, milk and salt and pepper to taste.
  5. Stir in the chicken and cooked veggies.
  6. Spread the mixture in a 9×13 baking dish.
  7. Place the biscuits on top of the mixture baked side down.
  8. Bake uncovered for 15 minutes.
  9. Cover with foil and bake for another 10 minutes.
  10. Remove foil and bake for an additional 5 minute if you would like the biscuits a bit more browned.

What Type of Chicken To use in This Recipe?

Use leftover chicken or rotisserie chicken. You can also cook and prepare chicken to freeze and then thaw to use in various recipes. How to cook  boneless chicken to use in recipes.
If making chicken for this recipe, simply simmer boneless chicken breast in chicken broth until the chicken is cooked through. Shred using two forks.
