We love using Joan of Arc Spicy Chili beans in this recipe, they make a delicious tomato gravy for a creamy and zesty rice & beans dish.
A delicious meal of sausage rice and beans with a tomato gravy
- 1/2 lb. sweet pork or chicken sausage, casings removed
- 2-3 cloves garlic, chopped fine
- 2 (15 oz.) cans Joan of Arc Chili Beans - Spicy (DON'T DRAIN)
- 1 (14.5 oz.) can fire roasted diced tomatoes
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 teaspoon cumin
- 2 teaspoons Cajun seasoning
- 1 cup chicken broth (extra broth for reheating rice and beans)

Remove casings from the sausage.

Using a large deep skillet with a lid, saute the sausage and garlic in a little olive oil until the sausage is browned.

Add the rest of the ingredients, stir well to combine and bring to a light boil.

Cover, reduce heat and simmer gently for 20 minutes.
Sausage Beans and Rice Tips:
The longer this dish sits the thicker it will get. The rice will start to absorb most of the liquid. Keep some extra chicken broth on hand or add water to get a thinner consistency.
You can add 1 small chopped onion to this dish as well. Just chop the onion fine and cook it with the sausage. If the sausage seems a little dry, drizzle a little oil over top while cooking.
Use Fresh Sausage for This Recipe
We love using fresh sausage made with either pork or chicken. Buy a whole pound of sausage and use the other half in another recipe later in the week.
- To cook the sausage, just make a slight slit on top of the sausage with a sharp knife. Gently remove the outer casings using your fingers.
- Continue to cook the sausage like you would ground beef, breaking up with a spatula as it browns. You don’t need any salt or pepper as the sausage is very seasoned on its own.
