If you want the perfect side dish, then Redskins Potatoes are what you want to put on the table. These yummy potatoes go well with just about anything, from pork chops to fried chicken. You can even eat them for breakfast alongside your favorite eggs. Save leftovers for many uses.

How to Make the Best Oven Roasted Redskin Potatoes with Herbs

When you think of healthy and clean eating, you don’t often think of the potato. Potatoes have often gotten a bad rap, not because they are unhealthy, but because they are super-delicious and we like to load them up with unhealthy toppings and then eat way too many!

  • These potatoes are part of a “clean eating” diet and a recipe you can feel good about.

Some of our favorite potatoes for roasting are the small round redskin potatoes. These potatoes are easy to roast because the skins are a little thinner, which makes for a tender yet crispy potato.

If you are looking for the perfect dinner side dish for chicken, pork and beef, this is it! Potatoes are a healthy addition to your diet because potatoes are an excellent source of potassium, fiber, vitamins C and B6! Make these super-delicious oven roasted redskin potatoes with your favorite entree. We also like to use any leftover potatoes the next day on our steak or chicken salad.

What do You Need to Make Roasted Reskin Potatoes?

  • Reskinned Potatoes
  • Olive Oil – use extra virgin olive oil
  • Garlic
  • Dried Dill
  • Dried Thyme
  • Dried Parsley
  • Onion Powder
  • Salt & Pepper

How to Prep the Red Potatoes?

Wash and dry the baby red potatoes and then using a sharp knife, cut the potatoes into quarters.

Toss the potatoes in the olive oil. Don’t forget to salt & pepper.

Bake on a cookie sheet for about 25-30 minutes.

Ingredients
  • 2 lbs. red-skinned potatoes, cut into quarters
  • 1-1/2 tablespoons olive oil
  • 4 cloves garlic, minced fine
  • 1 teaspoon dried dill
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 400 degrees F.

  2. Combine all ingredients in a medium bowl and toss to coat. Spray a cookie sheet with nonstick spray and arrange  potatoes on a single layer on the sheet. Bake for about 25 to 30 minutes, turning once until potatoes are fork tender.

Never be afraid to serve a healthy side dish of potatoes for dinner. You can also use the baby gold potatoes for this recipe. Find your favorite potato and make this recipe often.

How do you make your roasted potatoes crispy?

Make sure you preheat your oven before adding the potatoes to the oven. Always cook potatoes on the middle rack and in a single layer on your baking sheet. This allows the potatoes to cook evenly, and all the potatoes pieces will be finished cooking at the same time. Cooking uncovered will let the potatoes cook to a crisper crust … check potatoes after 20 minutes of cooking time. Stir the potatoes once during cooking. Don’t forget the nonstick spray so the potatoes don’t stick.

What to Serve with Reskinned Potatoes?

We love to serve a side dish of sour cream and chives.
Melt some cheddar cheese on the potatoes.
Add a little melted cheese and some bacon bits.

How to Store Leftover Redskin Potatoes

Store potatoes in an airtight container for about 3-4 days. Simply reheat in the microwave.
