We love using a thin layer of old-fashioned shortening to grease our cookie sheet. The potatoes slide around easily, and we swear they get a crispier crust.
If you are using larger chunks of potatoes, you may need a little bit longer cooking time. The smaller the potato pieces, the shorter the time.
