Roasted Chickpeas Recipe
Add some oomph to your vegetable tray with these healthy and delicious roasted chickpeas. Roasted chickpeas or garbanzo beans are so easy to prepare for a healthy snack or a great addition to your healthy salad. Use roasted chickpeas in lieu of croutons for a healthier salad topping!
We use fresh lemon and curry powder with just a hint of garlic to make these roasted chickpeas seriously addicting. Once you eat one you will be tempted to eat the whole bowl!
Use these delicious roasted chickpeas for a snack, vegetable tray or topping for a healthy salad.
- 1 25 oz. can chick peas or garbanzo beans
- 1/2 tablespoon olive oil
- 1 teapoon curry powder
- 2 medium lemon wedges

Preheat oven to 400 degrees F.

Rinse chick peas lightly in cold water and let dry on a clean kitchen towel.

Place the chick peas in a bowl and drizzle with oil, curry powder and the juice from the lemon wedges.

Stir to coat the chick peas as much as possible. Lightly salt & pepper to taste.

Spread coated chick peas out in a single layer on a cookie sheet.

Bake for 25-30 minutes, stirring once.
