You will love the delicious flavors in this healthy salad with cucumber, fresh blueberries and feta cheese. It all starts with a bed of fresh romaine lettuce and green leaf lettuce, cleaned, dried and chopped. Both of these lettuce choices will give you a healthy dose of Vitamin K and Vitamin A.
Hints and Tips for Making a Healthy and Delicious Blueberry Salad
- If possible, try and purchase organic blueberries. Toss your blueberries in a small sink colander and spray lightly with your sink sprayer. Let the blueberries dry before adding to your salad. You can sprinkle blueberries lightly with either salt or sugar.
- Definitely try and buy organic cucumbers if you enjoy eating them unpeeled. If you peel your cucumbers, it’s a bit safer to go with the non-organic. If the price isn’t significantly different, always go with organic whenever possible.

- 8 cups romaine lettuce and green leaf lettuce Or use Spring Mix Blend
- 1 large cucumber, peeled and chopped
- 1 pint fresh blueberries, cleaned and dried
- 1 cup feta cheese chunks

Wash the lettuce and let dry. Make sure the lettuce is dry before adding to a large bowl or platter. Toss lettuce with salt & pepper.

Mix half of the cucumbers and blueberries in with the salad.

Put the rest of the cucumbers and blueberries, along with the feta cheese on top of the salad.

Sprinkle top lightly with salt and pepper.
Scoop the Seeds out of Your Cucumbers
If you buy regular cucumbers, you can easily remove the seeds by scraping gently with a spoon. Wash the cucumbers thoroughly before handling. Slice the cucumbers in half longways. Scrape a spoon down the center of the cucumber to remove the seeds.
We like to slice the cucumbers into smaller chunks and then lightly salt.
Use Fresh Feta Cheese if Possible
We love using a block of fresh feta cheese and then cutting it into small pieces as needed. You can also buy crumbled feta cheese that is a little cheaper in cost. If you purchase the block of fresh feta, store in an airtight container in your fridge.
This is also a great salad to prepare when you find those plump blueberries at your favorite farmer’s market and you need to use them up!
