Sometimes you just need a super quick meal for two people and mac & cheese is just perfect for that. Hearty and filling and makes for a great lunch or dinner.

How Much Macaroni to Cook for 2?

Two ounces of dry pasta is equal to 1/2 cup dry pasta.  1/2 cup of dry pasta equals 1 cup of cooked pasta.  1 cup of dry pasta equals 2 cups of cooked pasta.

How do You Make Mac and Cheese for 2?

Gather your ingredients and follow the step-by step below to make an easy recipe in 10 minutes or less. The cheese sauce is simple to prepare: 1 tablespoon of butter and 1 tablespoon of white flour, salt & pepper, and 1 cup of whole milk.

How to Cook Macaroni?

Cook the macaroni according to package directions, but don’t forget to salt the water. You can even taste the water to see if it’s perfect for cooking noodles. Drain the noodles but add a touch of butter to prevent any sticking.

A roux is the cheese sauce that makes the mac and cheese recipe. A roux starts with 2 simple ingredients of butter and flour. What Ingredients Are Needed for this Recipe?

  • Elbow Macaroni or small shells
  • Butter – use real salted butter for this recipe.
  • Flour -white flour
  • Milk – we use whole milk or half and half.
  • Velveeta Cheese
  • Salt & pepper
  1. Cook 1 cup of dry macaroni according to package directions, drain and leave the macaroni in the pan.
  2. Make a quick roux using 1 tablespoon of butter, 1 tablespoon of flour, salt & pepper, and 1 cup of whole milk.
  3. Over medium heat, melt butter in a small skillet. Lightly salt and pepper then stir in the flour.
  4. Slowly add the milk to the skillet and continue to stir until well blended and no lumps.
  5. Add chunks of Velvetta cheese and stir again until cheese is melted.
  6. Pour cheese sauce over cooked macaroni and mix until pasta is well coated with sauce.

What to Serve with Mac and Cheese for 2?

Since this is an easy dish for 2 people and you don’t want a lot of fuss, serve a simple tossed salad with lots of cut veggies with an oil-based dressing.
