The Best Ground Turkey Zucchini Meatballs Recipe
We love turkey zucchini meatballs and are always looking for ways to perfect them! A healthy dinner starts with healthy ingredients and these yummy meatballs have lean turkey, oatmeal, and 2 whole cups of shredded zucchini!
After the meatballs have baked in the oven, we give them a light and tasty glaze with BBQ sauce. No one can resist these meatballs and they are every bit delicious as they are good for you.
How to Easily Shred Zucchini for Meatballs:
We use a small shredder to easily shred a small/medium zucchini. It only takes about 2 minutes to shred your zucchini into 2 cups. Make sure to wash and dry the zucchini before you start to shred. If you have leftover zucchini, toss in a baggie and store to sneak in other recipes.
Ingredients Needed for Zucchini Meatballs:
- Ground turkey – we love to use 85% lean ground turkey for more flavor and a moister meatball.
- Zucchini – fresh zucchini
- Shredded Parmesan cheese
- Oatmeal – regular oatmeal works best for this recipe
- Egg – organic fresh eggs if possible
- Lemon pepper seasoning
- BBQ sauce

We love these healthy turkey zucchini meatballs that are so easy to prepare for a healthy meal.
- 1 lb. ground turkey - 85% Lean
- 2 cups shredded zucchini ( about 1 medium zucchini)
- 1/2 cup shredded Parmesan cheese
- 3/4 cup oatmeal (regular oatmeal works best)
- 1 mediume egg
- 1 teaspoon lemon pepper seasoning
- 1/2 teaspoon salt
- 1/2 cup BBQ sauce

Preheat oven to 425 F. Spray a cookie sheet with nonstick spray or line with foil and lightly spay foil.

Gently mix everything together in a medium bowl with the exception of the BBQ sauce. Let mixture sit in the refrigerator for about 4-5 minutes.

using a 1/4 inch cup, fill the cup with turkey mixture and then roll into a ball shape using your hands. Lay the meatballs on the cookie sheet in a row - careful not to touch.

Bake for 20 minutes and then remove from the oven. Brush each turkey meatball with a light coating of BBQ sauce. Place back in the oven and bake or broil for about 2 additional minutes.
How to Quickly Shred or Grate Fresh Zucchini: Wash and dry the zucchini and cut off both of the ends. Grate the zucchini using the large holes on a hand grater. This is one of the quickest ways to grate zucchini for meatballs and it’s an easy clean up as well.
Fresh ingredients make these turkey zucchini meatballs a great choice for an easy and healthy dinner. Once you get the ingredients in the bowl you can use your hands to easily mix the meatballs. Don’t overmix or get the mixture too warm.

How many meatballs per pound depends on the size of your meatballs. We made about 14 larger meatballs. On average you could get about 30 smaller meatballs out of 1 lb. of meat.
