Velveeta Scalloped Potatoes – Creamy and Delicious Cream Sauce
Perfect potatoes for just about any occasion!
Every year for Thanksgiving we make the most delicious potatoes. They are actually anticipated by our Thanksgiving guests all year. To not make these Velveeta scalloped potatoes would definitely mean less guests!
There is just something about that block of Velveeta that turns a plain roux into a sauce that leaves everyone standing over the potatoes with a fork. Just a taste they say .. just a taste.
What is a Scalloped Potato?
Scalloped potatoes are thinly sliced potatoes cooked with cream or milk. Anything, including vegetables, can be scalloped. You can add any type of cheese to your scalloped potatoes or vegetables.
What Type of Potato is Best for Scalloped Potatoes?
We like to use Russet Potatoes for this potato recipe.
What Ingredients are Needed for Scalloped Potatoes
- Russet Potatoes
- Butter
- Flour
- Whole milk
- Velveeta Cheese
- Salt and Pepper
Easy Scalloped Potato Instructions:
- Preheat oven to 350 degrees and spray a casserole dish with nonstick spray.
- Wash, peel and slice potatoes into thin slices.
- Make the Roux. Melt butter and stir in flour with a wire whisk. Slowly add the milk and stir for about 2 minutes. Add salt and cheese. Let cook until cheese melts and sauce is thick.
- Add about 1/2 of the sliced potatoes to the bottom of casserole dish. Spoon over sauce. Add some extra chunks of Velveeta cheese.
- Repeat this layer. Dot extra chunks of cheese on top of the potatoes.
- Cover with foil and bake for 45 minutes. Uncover and bake for about 15 -20 additional minutes.

Delicious and Creamy Scalloped Potatoes made with Velveeta Cheese
- 2.5 lbs Russet Potatoes - washed, peeled and sliced thin
- 4 tablespoons butter
- 4 tablespoons flour
- 3 cups whole milk
- 1 teaspoon salt
- 4 oz. Velveeta Cheese, cubed (plus extra)

Preheat oven to 350 degrees.

Melt butter in a large saucepan. Stir in flour, salt, and pepper. Whisk to mix well. Add milk, a little at a time, and stir until thickened and bubbly. Add cheese and stir until melted. Remove from heat.

Place half of the sliced potatoes in a greased 9x13x2 inch casserole. Cover with half of the sauce. (At this point you can dot potatoes with small pieces of additional Velveeta, if desired). Repeat layers. Bake covered for 45 minutes. Uncover, and bake an additional 15-20 minutes or until potatoes are soft and cooked through.
Tip 1: Do not try and fill the casserole dish too full of potatoes. If you need more potatoes make an additional small casserole dish full.
Tip 2: After you peel the potatoes, place them in cold water until you have finished peeling all of the potatoes. That way they won't turn brown.
Velveeta Scalloped Potatoes are The Perfect Side Dish
Scalloped Potato Tips:
Tip 1: Do not try and fill the casserole dish too full of potatoes. If you need more potatoes make an additional small casserole dish full.
Tip 2: After you peel the potatoes, place them in cold water until you have finished peeling all of the potatoes. That way they won’t turn brown.
Tip 3: Try to slice the potatoes the same size in thickness so they cook evenly.
Tip 4: You can always add more milk if you would like a thinner sauce.
Tip 5: If you think you have too many potatoes in one dish, add a little bit of milk around the sides of the casserole dish.
Tip 6: Depending on how many potatoes are in the casserole dish, the potatoes may need to bake a little longer.
Tip 6: Leave the potatoes covered longer while baking and the top of the casserole won’t get as browned.
Perfect Velveeta cheese scalloped potatoes – Make two layers. First layer has sliced potatoes and then the cheese sauce. Dot with little piece of Velveeta Cheese. Repeat with the second layer. If cheese sauce gets too thick, simply add a little bit of milk. Don’t forget to salt each layer.
Don’t let the sauce get too thick. You can also add some small splashes of milk.
