Easy Hash Brown Potato Soup  – Make your weeknight meals easy with this delicious, loaded potato soup by using frozen shredded hash brown potatoes. This yummy soup is made right in your crockpot!

Loaded Potato Soup with Shredded Hash Brown Potatoes Cooked in the Crockpot

When the first hint of Fall is in the air, we start making warm & creamy crockpot soups! This Loaded Potato Soup made with Hash Brown Potatoes is perfect for the colder months when only something warm and comforting will do.

Pull out the slow cooker and thaw some frozen hash browns for this creamy comforting hash brown potato soup!

Hash brown potatoes make this soup easy to prepare so it’s perfect for a weeknight meal. Eat a delicious fully loaded baked potato with all the toppings in soup form without a lot of work!

Cook Bacon for the Loaded Potato Soup

Dice the bacon and lightly cook before tossing in the crockpot.  Add your onions here as well. Cook most of the way through but do not burn.

Dice the bacon on a cutting board using a sharp knife.

Ingredients Needed for Crockpot Hash Brown Potato Soup:

  • Bag of shredded frozen hash brown potatoes, (We love Simply Potatoes)
  • Chicken broth
  • Milk – whole milk or reduced fat milk both works fine
  • Cream of chicken soup – Campbell’s soup
  • Carrot
  • Bacon -regular bacon works well in this recipe
  • Onion – white onion
  • Cloves garlic
  • Shredded cheddar cheese 
  • Sour cream – for topping
  • Green onions 

How to Make Crockpot Hash Brown Potato Soup in Your Slow Cooker

Step 1.

Cook the diced bacon for about 4-5 minutes. Add the onion and garlic and cook for an additional few minutes.

Step 2.

Add hash brown potatoes, chicken broth, milk, soup, carrots, cooked bacon, onion, garlic, and salt and pepper. Cook on high for 3 hours or low for 5- 6 hours.

Step 2.

Add in 1-1/2 cups cheddar cheese and stir until cheese is melted. Serve potato soup with extra cheese, dabs of sour cream, extra bacon and green onions.

Ingredients
  • 1 20 oz. bag shredded hash brown potatoes, thawed (We love Simply Potatoes)
  • 4-1/2 cups chicken broth
  • 1 cup milk
  • 1 can cream of chicken soup
  • 1 medium carrot, diced into small pieces
  • 6-7 slices of bacon, diced (save some for toppings)
  • 1/4 cup onion, diced fine
  • 1-2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups shredded cheddar cheese save 1/2 cup for soup topping
  • Sour cream for topping
  • Green onions about 2 sliced for toppings
Instructions
  1. Add potatoes, broth, milk, soup, carrots, bacon, onion, garlic, and salt and pepper. Cook on high for 3 hours or low for 5- 6 hours.

You can store potato soup in an air-tight container in your refrigerator for about 4 days. This potato soup reheats very well for lunch or another dinner. Soup can also be eaten as a tasty snack. Just pop in the microwave for about 30 seconds. Garnish with some addition shredded cheddar cheese.

Can Potato Soup Be Frozen

You can also freeze this soup for about 3-6 months. Just pack in a resealable freezer bag and lay flat in your freezer or use an air-tight container. Soup will last about 6 months in the freezer. let soup thaw in the refrigerator and then reheat in a pan or in the microwave.
