Try this healthy chicken stew for an easy on the stomach dinner. If stomach problems are an issue for you, and something simple is needed, this recipe is perfect with just a few ingredients yet makes for a hearty and filling meal. And this chicken stew is perfect even if you don’t have any issues!

Healthy Chicken Stew Recipe

This delicious healthy chicken stew recipe is so simple to prepare that you will find yourself making this often for a quick lunch or dinner.

No chopping onions and garlic, no sauteing of vegetables, just drop everything in a pot and let it simmer for about 40 minutes. The added oatmeal at the end of the cooking time thickens the stew without the need for flour. Most oatmeal brands are gluten-free but check with the manufacturer to make sure.

Sometimes you just need a soup recipe that is simple to prepare and also easy on the stomach. This is great recipe if you have any stomach issues or someone in the house suffers from heartburn or acid reflux.

  • Boneless, skinless chicken thighs
  • Carrots
  • Potatoes – a russet potato is fine
  • Chicken broth – try for an organic brand
  • Dried rosemary
  • Dried thyme
  • Frozen baby peas
  • Oatmeal – preferably organic oatmeal

Ingredients
  • 1-/2 lbs. boneless, skinless chicken thighs
  • 1 cup carrots, peeled and diced
  • 3 cups potatoes, peeled and diced
  • 6 cups chicken broth
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1 cup frozen baby peas
  • 1/2 cup oatmeal
Instructions
  1. Rinse chicken and place in a stock pot with everything but the oatmeal and peas.
  2. Bring to a light boil; reduce heat and simmer for 35 minutes.
  3. Stir in the oatmeal and peas and continue to cook for another 10 minutes, stirring occastionally.

If you are not restricting or watching sodium levels. add some chicken bouillon powder to the stew.  You can also add additional chicken broth or water if the stew becomes too thick.
