A spicy and flavorful homemade chili with taco seasoning, chili powder and a little cumin to jazz things up. We also use seasoned black beans and Joan of Arc spicy chili beans to make this recipe a little more seasoned. If you use the Joan of Arc spicy beans don’t drain.

Ingredients needed for Mexican Chili:
- Ground beef – lean ground beef works best
- White onion
- Olive oil
- Packet taco seasoning
- Tomato sauce
- Kidney beans
- Black beans, drained
- Rotelle diced tomatoes with green chilis
- Canned corn – can use thawed frozen corn as well
- Chili powder
- Dried Cumin
- Shredded Mexican Cheese Blend

- 1 lb. ground beef
- 1 small white onion
- 1/2 tablespoon olive oil
- 1 packet taco seasoning
- 1 cup water
- 1 29 oz. can tomato sauce
- 1 15 oz. can kidney beans, drained
- 1 15 oz. can black beans, drained
- 1 10 oz. can Rotelle diced tomatoes with green chilis
- 1 6 oz. can corn, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Mexican Cheese Blend for Topping

Using a large deep skillet, saute onions in olive oil until they start to get soft.

Add the ground beef to the skillet with the onions and continue to brown the beef using a spatula to break beef into small pieces.

Sprinkle taco seasoning over beef and stir in the 1 cup of water. Continue stirring until seasoning is well blended with the beef.

Add the rest of the ingredients with the exception of the cheese and simmer for 25 minutes.
A great chili recipe starts with hamburger ground beef and onions. Break up the beef using a spatula as it browns. Don’t forget to always season the ground beef with a little salt & pepper as you brown. Cook beef until all of the pink is gone and the beef is cooked through.
Once the ground beef and onions are well browned, sprinkle beef overall with taco seasoning and then add 1 cup of water.
You can purchase your favorite level of heat in your taco seasoning – if you need a little bit spicier, just add a couple pinches of red pepper flakes.
The longer the chili simmers, the more the flavors will become enhanced, so always let chili simmer a bit longer. If the sauce becomes too thick just add a little additional water.

Yes, we love using the slow cooker or crockpot to make perfect chili recipes. Just brown the ground beef and add to the crockpot. Add the rest of the ingredients, except for the cheese of course! Cook on low for 5-6 hours or on high for about 3 hours. Serve this chili right out of the crockpot with shredded cheese and crackers.
