Creamy Cauliflower Mash Keto Version

You can quickly and easily cook this creamy Creamy Cauliflower Mash Recipe right in your Microwave.  Add a little extra cream or butter to suit your taste. Cauliflower is always a great option to the potato because of the calories and nutrients.

Ingredients Needed For Cauliflower Mash

Head cauliflower
Garlic powder
Butter
Heavy cream
Fresh parsley
Salt and Pepper

How To Prepare Cauliflower Mash

  1. Add  prepared cauliflower, water, and garlic powder to a large microwave-safe container. Season with salt and black pepper, to taste, and toss to combine.
  2. Cover and microwave on high until the cauliflower is soft, approximately 8-10 minutes. (Cook time will vary for different microwaves, check after 5 minutes and adjust final cook time accordingly).
  3. Remove from microwave and transfer the cauliflower to a large mixing bowl. Add the butter and heavy cream and blend until smooth and creamy.
  4. Taste and adjust seasonings to taste. Sprinkle with fresh parsley and serve immediately. Enjoy!

Purchase a mostly white cauliflower that looks like it has healthy leaves.
Trim off the leaves.
Cut off the stem.
Cut the florets away from the remaining stem.

Yum, we love adding sour cream to our Cauli Mashed Potatoes. Simply stir in about 1/2 cup of sour cream with the butter and cream.

Cauliflower Mash with Cheese

Add your favorite cheese to the Cauli Mashed Potatoes along with the sour cream. Use about 1/2 cup of shredded sharp cheddar cheese or Colby Jack cheese.

Why We Love Cauliflower for Mashed Potatoes

Even with a few additions, cauliflower is still much lower in carbs and calories than a potato.

How to Store Cauliflower Mash

Once prepared, the mash will keep nicely in your fridge for about 4 days. When storing cooked food always use an airtight container.
If you purchase a fresh head of cauliflower to make this recipe, it should keep in your fridge for about 4-6 days. Store in a container that lets in some air.
