Oven Roasted Cauliflower with Garlic and Rosemary
We love roasted vegetables, and when you roast cauliflower it has a wonderful nutty flavor that the roasting brings out.
When you add things like garlic and rosemary, there are different levels of deliciousness that are formed that keep you reaching for more.
If you’re not sure what to do with that head of cauliflower that keeps staring at you from the fridge, make a pan of oven roasted cauliflower with garlic and rosemary.
Throw some of the roasted cauliflower on top of quinoa and your favorite dressing to make a quick & healthy salad.

healthy ways to prepare cauliflower
- 1 head cauliflower cut into florets
- 4 garlic cloves chopped fine
- 2 tablespoons olive oil
- 1/2 fresh lemon
- 1 tablespoon dried rosemary
- salt and freshly ground black pepper

Preheat oven to 400°.

Break cauliflower into florets and slice each floret in half. Toss cauliflower along with the oil, garlic and rosemary. Lightly salt and pepper and squeeze some lemon over all. Toss until well coated.

Scatter the cauliflower on a baking sheet.

Roast for 20 minutes, toss again, and then put back in the oven for an additional 5 minutes.
