We love saving money on dinner recipes that also contain healthy ingredients. This one pot Sausage Beans and Rice Recipe uses beans as the main feature.  Beans are a great source of fiber, high in protein, and loaded with nutrients.

Grab your frying pan along with just a few ingredients, and this delicious Sausage Rice and Beans dinner is on the table in no time! Serve with a basic tossed salad and bread and butter on the side. This is definitely a one pot dish the whole family will love.

Spice up your bland rice and beans dinner with sweet sausage and Cajun seasoning. Nourishing and filling for a great family meal.

We love using Joan of Arc Spicy Chili beans in this recipe, they make a delicious tomato gravy for a creamy and zesty rice & beans dish.

A delicious meal of sausage rice and beans with a tomato gravy

Ingredients
  • 1/2 lb. sweet pork or chicken sausage, casings removed
  • 2-3 cloves garlic, chopped fine
  • 2 (15 oz.) cans Joan of Arc Chili Beans - Spicy (DON'T DRAIN)
  • 1 (14.5 oz.) can fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 2 teaspoons Cajun seasoning
USE TO REHEAT THE RICE AND BEANS THE NEXT DAY IF IT'S TOO THICK
  • 1 cup chicken broth (extra broth for reheating rice and beans)
Instructions
  1. Remove casings from the sausage.

  2. Using a large deep skillet with a lid, saute the sausage and garlic in a little olive oil until the sausage is browned.

  3. Add the rest of the ingredients, stir well to combine and bring to a light boil.

  4. Cover, reduce heat and simmer gently for 20 minutes.

Sausage Beans and Rice Tips:

The longer this dish sits the thicker it will get. The rice will start to absorb most of the liquid. Keep some extra chicken broth on hand or add water to get a thinner consistency.

You can add 1 small chopped onion to this dish as well. Just chop the onion fine and cook it with the sausage. If the sausage seems a little dry, drizzle a little oil over top while cooking.

Use Fresh Sausage for This Recipe

We love using fresh sausage made with either pork or chicken. Buy a whole pound of sausage and use the other half in another recipe later in the week.

  • To cook the sausage, just make a slight slit on top of the sausage with a sharp knife. Gently remove the outer casings using your fingers.
  • Continue to cook the sausage like you would ground beef, breaking up with a spatula as it browns. You don’t need any salt or pepper as the sausage is very seasoned on its own.

What Type of Beans Works Best?

We love using Joan of Arc Chili Beans (Spicy) Don’t drain the beans, they are cooked in a delicious spicy sauce. You can definitely use regular kidney beans for this recipe and you can even add additional beans to stretch this even further. This recipe makes a lot and leftovers are even better the next day.

Add Black Beans – Try this recipe using a can of black beans and chili beans. Black beans also make a great addition to this recipe.

What to Serve with Sausage Rice and Beans

  • You will want to bake some fresh rolls to go with this recipe along with butter. This recipe makes a delicious creamy gravy that you can use the bread to scoop up some sauce.
  • Serve with a basket of crackers.
  • A platter of sliced cheese and fresh fruit.

How to Store Leftovers

Use an airtight container to store leftovers for about 4-5 days. This recipe makes awesome leftovers to eat the next day or later in the week.
