Skillet Mexican Chicken and White Beans – 15 Minutes and just 5 Simple Ingredients!
This chicken recipe is now one of our new favorite “go to recipes’ that uses pantry white beans, taco seasoning and thin pieces of chicken breasts. Add some diced fresh tomatoes or sliced cherry tomatoes and top off with some melted Mozzarella. A Mexican flavored chicken dish that is super-quick and delicious.
Nowadays with most of of “sheltering” at home, families are looking for ways to not only cut back on the grocery budget, but are looking for easy dinner recipes that anyone can cook. This recipe is simple, very filling and actually quite delicious!
This delicious dinner uses just a few ingredients that you will find in your pantry
- 1-1/4 lb. chicken breast, thin sliced breasts
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- 2 (15 oz.) cans white beans, drained (We use Great Northern White Beans)
- 1 cup cherry tomatoes, cut in half
- 1 cup shredded mozzarella
- salt & pepper

Sprinkle both sides of chiken strips with salt and taco seasoning.

Using a large skillet with a lid, heat olive oil on medium high heat.

Add chicken strips to the hot oil and cook for about 3-4 minutes, flip chicken over and cover with a lid, cook for about 3-4 more minutes.

Uncover and add beans and tomatoes to the skillet, sprinkle with salt and taco seasoning. Cook for about 3-4 minutes or until beans are heated through.

Sprinkle chicken with cheese and cover with the lid until the cheese has melted.
If you have just a few simple ingredients and a skillet, this dinner is on the table in no time. For this recipe, we buy thin sliced chicken breasts, if you can’t find the thin sliced breasts you can use thicker breasts and slice them in half on the diagonal.
The basic recipe of this skillet Mexican chicken is chicken breasts seasoned with taco seasoning cooked with white beans. It is easy and delicious as is, but for additional flavor, add fresh tomatoes and your favorite cheese! You could also add chopped garlic in with the beans and some diced jalapenos.
