Equipment needed to make red bean meatballs

  • Measuring cups (1 cup, 1/3 cup, 1/2 cup)
  • Measuring spoons (tablespoon, teaspoon, 1/2 teaspoon)
  • Large mixing bowl
  • Baking Sheet
  • Parchment paper
  • Fork or potato masher

Ingredients for your meat-free meatballs

  • 1 (40 oz) can of red beans
  • 2 cups quick oats
  • 1/3 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil, plus more to brush over during baking
  • 1-1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon parsley
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 cup grated parmesan

How to make Meatless Meatballs

Serving Size: approx. 24 “meatballs” (depends on size)

Prep Time: 15-20 min

Cook Time: 30 min

Step 1. Preheat oven to 350°F.

Step 2. Drain and rinse beans and empty them into a large mixing bowl.

Step 3. Mash beans using the back of a fork or a potato masher.

Step 4. Add all other ingredients.

Step 5. Use your hands to mix everything together, squishing any large parts of beans left as you mix.

Step 6. Roll into balls (approx. 3 tbs of mixture) and place on a baking sheet lined with parchment paper.

Step 7. Bake for 15 minutes.

Step 8. Brush olive oil all over each meatball and flip over.

Step 9. Bake for an additional 15 minutes or until browned. They will be crispy/crackled on the outside.

Step 10. Serve with your favorite pasta and sauce.

Tips & tricks

  • While rolling into a ball, press firmly and the mixture will come together. Rinse hands as needed.
  • Would you like larger “meatballs”? Add more mixture when you are rolling into a ball. Add a few extra minutes if needed.

Best Way to Store Red Bean Meatballs Leftovers

It is best to store them either in the fridge or freezer. Make sure the meatballs are cooked a cooled before adding to a freezer bag and placed in the freezer. Meatballs that have been frozen will last a couple of months.

How long will Meat-free Meatballs Last in the Refrigerator?

Meat-free meatballs will last in the refrigerator for up to 4 days. Just make sure to store in an airtight container. We prefer glass containers to plastic.

Can I Freeze Red Bean Meatballs?

Yes, meat-free meatballs freeze well and will last for up to 3 months in the freezer.

How to Reheat Red Bean Meatballs?

To reheat meat-free meatballs, simply place them on a baking sheet in the oven at 350°F until heated through, about 8-10 minutes. You can also microwave meat-free meatballs for 1-2 minutes or reheat them directly in your favorite pasta sauce.

Vegan or Vegetarian? Remember, just because a dish does not contain red meat, it does not make it fully vegan or vegetarian. It is important to look at all of the ingredients to make sure a dish falls into one of those categories. This is a meatless vegetarian meal. This meal contains eggs so it would not be considered Vegan.
