Easy Cream Sauce Recipe Made with Pecorino Romano Cheese
One of our all-time favorite dishes is a creamy Pecornio cream sauce served with pasta. Serve this delicious creamy recipe with you favorite pasta or spaghetti and a side of warm rolls with butter.
What Ingredients Do I need to Make this Amazing Pecorino Cream Sauce?
Half and half
Pecorino Romano cheese freshly grated
Parmesan cheese freshly grated
Delicious Additions –
Fresh Baby Spinach
Dried or Fresh Basil
Use this fresh creamy cheese sauce tossed with your favorite pasta or spaghetti
- 1 lb. Thin Spaghetti
- 3 tablespoons butter
- 2 tablespoons flour
- 2 cloves garlic
- 2 cups half and half
- 1/2 cup chicken Broth
- 1/2 cup Parmesan Cheese grated
- 1/2 cup Pecorino Romano grated
- Salt and pepper to taste
Cook pasta according to package directions, drain and put pasta back into same pan.
Gather all your ingredients to make the "roux" and have ready to go on the counter next to your stove.
Heat butter in a medium sized skillet over medium heat and lightly cook garlic for about 1 minute, careful not to burn.
Add the flour and whisk constantly about 1 minute until well blended with the melted butter.
Very slowly whisk in the half & half and stir until sauce in starting to thicken. Add the chicken broth and cheese to the skillet and stir until well blended and cheese is melted.
Add you cooked and warm pasta to the pan and stir until well coated.
Add cooked pasta or spaghetti to the skillet with the cream sauce and stir until all of the pasta is well coated with sauce.
Serve with additional freshly grated Parmesan cheese.

This Cream Sauce is Made with A Roux – What is a Roux you Ask?
A “roux” is just flour and butter that is cooked together to make a base that will thicken the sauce. It is typically made from equal parts of fats “butter” and flour.
If you have ever made a roux you know that the secret is two things: have all your ingredients ready and on hand because you have to do the steps rather quickly and you need to be able to easily grab your ingredients not hunt for them all over the kitchen. The second thing to remember is to add the half and half (or heavy cream or milk) very slowly, only add a little splash at a time to get your roux started.
What Exactly is Pecorino Cheese –
Pecorini cheese is a hard cheese made from goat’s milk that is a little more intense in flavor than our beloved Parmesan Cheese. If you don’t have Pecorino or can’t find it in the grocery store you can substitute Parmesan cheese to make this delicious creamy sauce.
When we make a creamy Italian cheese sauce we typically grate our own fresh block of cheese. There really is no substitution for this crazy fresh taste of freshly grated hard cheese.
Here, the stronger flavor of Pecorino Romano is balanced with an equal amount of Parmesan to create a flavorful cream sauce that isn’t overwhelming. Of course, the ratio of Pecorino to Parmesan can be easily adjusted up or down to suit individual tastes.
