Vegan Couscous Salad Recipe with Apples

You will love this Vegan Couscous Salad Recipe with apples that is perfect for a fresh and zesty side dish or even a healthy afternoon snack.  Lots of fresh herbs make this salad perfectly healthy and delicious.

If you are a vegetarian looking for healthy foods, this is the perfect recipe for you. These recipes are also good for the planet as all vegan/vegetarian recipes are.

 Couscous-Vegan-Apple Salad

This fresh and delicious salad is perfect as a picnic side dish or light lunch.  The couscous used in this dish is known in some regions as pearl couscous or Israeli couscous and can be found in the ethnic aisle.  For best results couscous should be prepared al dente.

Ingredients Needed for Vegan Salad:

Couscous Salad Ingredients

  • Pearl Couscous
  • Granny Smith Apples
  • Italian Parsley
  • Fresh Dill, chopped
  • Fresh mint, chopped
  • Fresh basil, chopped
  • Lemon
  • Extra virgin olive oil

Directions:

  1. Cook couscous in lightly salted water according to package instructions. Couscous should be prepared al dente. When finished cooking set aside.

  1. In a large serving bowl add apples, parsley, dill, mint and basil. Toss to combine.

  1. Add couscous to bowl. Combine with apple and herb mixture.

  1. Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar.

We love to use the green Granny Smith apples for this recipe. Granny Apples are a tangy and less sweet apple that goes perfectly in this recipe.

Where to Find the Best Apples?

You can find fresh apples at your local farmer’s market. Ask if the apples have been organically grown before purchase. Always wash apples thoroughly before eating or using in a recipe.
