We love to make an easy fried rice that uses Minute rice to get this dinner on the table quickly.

Fried Rice with Minute Rice

Every minute counts when you have a job, family and house that needs cleaned. Some days you just aren’t going to be able to do it all .. and that’s ok.

We weren’t created to do it all in one day.  To balance your hectic schedule – tonight make an easy dinner including protein and veggies that you can feel good about feeding your family and still have time left over for homework, laundry and a little … me time!

I have a confession to make – I love using Minute Rice Instant Rice!  And You will Love this fried rice with minute rice!

In the heart of the battle for clean eating and good health stands a box of red Minute rice. Is it a convenience food or a healthy source of carbs and fiber? Or maybe a little bit of both … Is this rice something that one should feel good about feeding their family if it only takes 5 minutes to cook?

Well, we think yes!

Minute Rice is an enriched rice long grain rice that contains Thiamin, Niacin and Folate. It’s a delicious instant rice that cooks complete in only 5 minutes.

How to Make Easy Fried Rice with Minute Rice:

STEP 1. Bring 2 cups of water to a boil with 1/2 teaspoon salt. Add the Minute Rice to the pan and stir. Cover and remove from the heat and let sit for 5 minutes.

STEP 2. To Make the Teriyaki Sauce: Using a small bowl, whisk together the sesame oil, Tamari, rice vinegar, sugar, and cornstarch.

STEP 3. Using a large skillet, use half of the butter and oil to gently cook the eggs. Lightly salt & pepper eggs and they cook.

STEP 4. Remove eggs from the skillet to a dish and add the rest of the butter and oil. Cook the peas and carrots for about 3-4 minutes,

STEP 5.  Add the Teriyaki sauce to the pan and stir. Cook for about 2 minutes.  Add eggs and rice to the skillet and stir until everything is well coated. Cook on low heat for about 3-5 minutes.

Ingredients
  • 2 cups Minute Rice, uncooked
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 small eggs, lightly beaten
  • 2 cups peas and carrots, thawed
Sauce Ingredients
  • 2 teaspoons Sesame oil
  • 2 tablespoons Soy Sauce or Tamari
  • 2 tablespoons Rice Vinegar
  • 1/2 tablespoon sugar
  • 2 teaspoons cornstarch
