We have a confession to make – we LOVE minute rice! Cooking regular rice can be a daunting task when you have to be careful not to over cook and not to under cook the rice Even if you follow the directions, it can still turn out well … not so good.
But not with Minute Rice! Minute Rice is easy to prepare and always comes out perfectly – ready to eat or ready to add to your favorite recipe.
How Do You make Minute Rice?
There are 2 simple ways to make Minute Rice or Instant Rice. You can cook minute rice on your stove top or you can cook the rice in your microwave. Both ways will work well to cook any instant rice.
Serving Sizes for Stove top and Microwave:
for 2 servings – 1 cup water and 1 cup Minute Rice
for 4 servings – 2 cups water and 2 cups Minute Rice
for 6 Servings – 3 cups of water and 3 cups Minute Rice.
Directions for Minute Rice (White Rice)
Minute Rice Microwave – The easiest way to make Minute Rice is in your microwave. Just add 1 cup of water or chicken broth to a medium (microwave-safe) bowl with 1 cup of Minute Rice. Add a little bit of salt for flavor, cover and microwave for about 4 minutes on high.
Remove from the microwave and let sit for 2 minutes. Fluff rice with a fork and serve.
For larger servings – You can also use 2 or 3 cups of broth or water with 2 or 3 cups of minute rice, just make sure the dish is large enough to hold the rice and add 1 additional minute to cooking time. Microwave for 5 minutes on high.
Stove Top Minute Rice – 5 Minute Rice!
Minute Rice Stove Top – Boil water or broth in a saucepan. Add rice, stir, cover and remove from heat. Wait 5 minutes, or until water is absorbed, then fluff with a fork.
How Many Calories in Minute Rice?
One half cup of cooked Minute Rice is 170 calories.

How to Make Easy Rice Bowls Using Minute Rice –
Use Minute Rice or instant rice to make your delicious rice bowls even easier. Below we have cooked our rice in chicken or vegetable broth, seasoned our beans with cumin, and added fresh corn. Squeeze some lime and you have the beginnings of a beautiful bowl.
- 1 cup minute rice cooked in the microwave with chicken broth
- 1 cup of black beans seasoned with cumin
- 1 cup fresh corn
- squeeze of lime juice
Skillet Minute Rice with Beans, Corn and Cheese
Turn that simple rice bowl into a warm and cheesy side dish for dinner –
- 1 cup minute rice cooked in the microwave with chicken broth
- 1/2 cup additional chicken broth
- 1/2 tablespoon olive oil
- 1 cup of black beans seasoned with cumin
- 1 cup fresh corn
- 1 cup Mexican cheese
- squeeze of lime juice
While your rice is cooking in the microwave, heat olive oil in a large skillet and add the beans and corn. Season with salt, pepper and cumin. Add the chicken broth and turn heat to medium-high. Add the rice and stir in with a spatula. When everything is hot, add the cheese and cover. Let cook for about 3-4 minutes or until everything is heated through and the cheese is melted.
Minute Rice, Broccoli and Cheese Casserole
We love this quick and easy side dish using Minute Rice!
1 (10 oz.) box chopped broccoli, thawed
1-1/2 cups Minute rice cooked in 1-1/2 cups chicken broth in the microwave
1 can Campbell’s Cream of Chicken Soup
1/2 can milk
1 cup Cheddar cheese
Preheat oven to 350 degrees. Spray casserole dish with nonstick spray. Add broccoli to the bottom of the dish and lightly salt and pepper. Stir in the soup and milk. Gently stir in the cooked rice. Sprinkle with cheese. Cover and bake for 25 minutes. Uncover and bake for about 5 additional minutes.
Spoon the cream of chicken soup in with the thawed chopped broccoli.
