Asparagus for Breakfast! Steamed asparagus with a little lemon and a poached egg. Nutritious and fiber-filled breakfast that is super delicious. You may think of fresh asparagus as a dinner food, but amazingly this vegetable is delicious for a filling and healthy breakfast food.

Eggs with Asparagus for a Healthy Breakfast

What a great way to start your day!  Asparagus contains the type of fiber that promotes healthy gut bacteria and a healthy gut is a happy gut! Add to that the nutritious little egg, you have an awesomely healthy breakfast that is also low in fat and calories.

By adding vegetables to your morning breakfast, you are sure to get your 5-6 servings of vegetables per day. Add a little pan roasted tomatoes for an extra kick of flavor and nutrients.

Steam the Fresh Asparagus

Steam the asparagus while cooking the eggs or simply cook in a skillet of lightly boiling water for about 3-4 minutes. Don’t overcook the asparagus or it could get soggy.

It takes about 5 minutes to steam asparagus and the benefits of steaming vs. roasting is less fat and calories.  Drizzle a little lemon juice, salt and pepper on the asparagus while steaming and you won’t miss the fat from butter at all.

Poached Egg with Lightly Steamed Asparagus and Pan Roasted Tomato for a healthy start to your day.

Ingredients
  • 1 bunch fresh asparagus cleaned and ends snapped off
  • 4 large eggs
  • salt & pepper
  • 1/4 of a fresh lemon
  • 1 tablespoon shredded Parmesan cheese
Instructions
  1. Steam asparagus for 5 minutes.
  2. Lightly add lemon, salt and pepper to asparagus while steaming.
  3. Poach 4 eggs over easy.  While eggs are poaching, fry tomatoes in a little olive oil and a sprinkle of salt and pepper.

  4. Serve eggs on top tomatoes and asparagus.

How to Poach an Egg

Want to see the best way to poach eggs?  We use and love this perfect poaching pan —> egg poaching pan.

There are a few easy ways to poach an egg, but using a poaching pan is definitely one of the easiest.  You can also fill a small 8″ frying pan with a small amount of salted water and bring to a light boil. Gently crack the egg into the water and let it cook for about 3 minutes.

How to Steam Asparagus

Start with fresh asparagus. Clean asparagus by breaking off the ends and rinsing with cold water.  Use a steamer basket in a pot or pan filled with about 1/4 inch of water. Bring water to a light boil. Lightly salt asparagus and steam for about 3-4 minutes or until the asparagus in tender. Drizzle with lemon juice while steaming.

How To Bake Asparagus

Preheat oven to 425 degrees.

Clean asparagus in cold water and gently break the ends off.  Pat dry with a paper towel.

Lay fresh asparagus on a baking sheet lined with foil. Drizzle with olive oil and lightly salt and pepper.

You can also use some fresh squeezed lemon.

Bake for about 10 minutes.
