We love a simple and fresh lemon baked cod for an easy dinner that is also healthy, fast and delicious! This lemon cod bakes up in about 20 minutes and is simple enough to serve every week.
Cod is a wonderful tasting mild fish that even kids love as well. Topped with some crunchy Panko-style breadcrumbs and creamy butter, this dish is one of our cod fish favorites, and sure to be yours too.
You can also sprinkle fish lightly with paprika for a slightly sweet touch and to make it pretty. Pretty fish is yummy.
Mix a small amount of Parmesan cheese with the Panko breadcrumbs to make a cheesy baked fish.
Make your own fresh & scrumptious tartar sauce by mixing mayonnaise, finely chopped sweet pickles, a little dill, sugar, and a touch of lemon. YUM!
Ingredients Needed for Lemon Baked Cod:
- Fresh Cod Filet
- Lemon
- Butter
- Olive Oil
- Panko Breadcrumbs
- Dried Parsley and Salt & Pepper

- 1-1/2 lbs. cod filet
- 1 lemon
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup Panko breadcrumbs
- 1/2 tablespoon dried parsley
- salt & pepper

Preheat oven to 350 degrees.

Lay foil on a cookie sheet.

Drizzle the olive oil on the cookie sheet where you will place the fish fillets.

Lay the fish fillets on top of the oil.

Squeeze lemon over the fish.

Lightly salt and pepper and sprinkle with parsley.

Sprinkle with Panko Breadcrumbs.

Dice the butter and lay pieces on top of the fish.

Bake for 20 minutes.
