Delicious and Healthy Greek Yogurt Chicken Recipe – Yogurt and Curry Marinated Chicken
If you are looking for something differently delicious, give this chicken with Greek yogurt marinade a try. It’s easy to prepare and the added Smucker’s Simply Fruit really mingles well with the flavor of the curry.
Serve the chicken with rice and a green vegetable like peas or green beans. Leftovers heat up nicely and you can eat the chicken strips in warm flour tortillas for lunch or on top of a bed of lettuce for a healthy salad.
Leave the chicken marinate for a few hours before cooking or at least 30 minutes.

- 1 1/2 lb. boneless chicken breast, cut into strips
- 1 small container of plain Greek yogurt
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 2 tablespoons Smucker's Simply Fruit Apricot

Preheat oven to 375 degrees F. Spray a cookie sheet with nonstick spray.

Using a medium bowl, mix together the marinade ingredients and coat the chicken.

Cover and leave in the refrigerator for 4 hours or at least 30 minutes.

Lay chicken strips on the cookie sheet and bake for 20 -22 minutes, or until chicken is cooked through.

Don’t want to bake your chicken? You can cook the chicken strips on the stove top instead of the oven. Heat 1 or 2 tablespoons of olive oil in a large skillet. Using medium heat, cook chicken until browned and cooked through.
