We love healthy chicken meatballs, and we know you will too! Less fat and calories and just as much protein as beef. There are many ways to use chicken meatballs so let’s get baking!

Healthy Chicken Meatballs Recipe made Ground Chicken, Curry Powder and Brown Sugar

A delicious mix of curry powder and brown sugar makes this healthy chicken meatballs recipe one of our favorite meatball recipes using ground chicken.

Serve these meatballs plain or with a side of rice sprinkled with a little soy sauce.  Top a healthy salad with chicken meatballs for something a bit different.

We love cooking and baking with healthy turmeric. This healthy spice helps to fight inflammation and aids in digestion.

Healthy Chicken Meatballs for an Easy Dinner or Snack or Topping for a Healthy Salad

Ingredients
  • 1 lb. ground chicken
  • 1 tablespoon olive oil
  • 1 large egg
  • 1 tablespoon brown sugar
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground tumeric
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
Instructions
  1. Preheat oven to 375 degrees.

  2. Gently mix everything together.

  3. Using a tablespoon, measure out a level scoop of ground chicken meatball mixture.

  4. Using the palm of your hands, roll mixture into small meatballs.

  5. Spray a casserole dish or cookie sheet with nonstick spray and place meatballs on sheet.

  6. Bake for 10 minutes, turn meatballs and bake for an additional 7-8 minutes.

This chicken meatball recipe makes about 24 small meatballs.  Use a tablespoon size measuring spoon to measure out the correct portion of ground chicken.  Level off one tablespoon of the ground chicken per meatball.

Add meatballs to your salad. Healthy salads are delicious with protein-packed healthy chicken meatballs. Don’t forget some fruit and plenty of healthy cucumber. Toss on some healthy nuts if you have them.

Add meatballs to your rice bowl. A simple bowl of rice, cucumber and chicken meatballs makes a light and tasty meal. Simply sprinkle with a little soy or teriyaki sauce.

Chicken Meatball Tips:

  • Don’t overwork the meat by mixing too long. Less is better when mixing any meat for meatballs.
  • If the meat gets too warm just stick it in the refrigerator for about 5 minutes.
  • If you want the meatballs browned a little on top, stick under the broiler for about 2-3 minutes.
  • Don’t be tempted to over bake your meatballs as this will dry them out.
  • If your hands get sticky, simply rinse with cold water.

How Long to Bake Meatballs?

This recipe calls for about 18 minutes of cooking time in the oven. Always keep in mind the size of your meatballs will vary the cooking time.  Poultry cooking internal temperature needs to reach 165 degreed on your instant read thermometer.

How to Get Equal Portions of Your Meat?

We like to use a small ice cream soup to measure out our meatballs.

Can you Freeze Meatballs?

Let your meatballs cool completely and then place meatballs in a single layer on a baking/cooking sheet and place in the freezer for about an hour.

Check to make sure meatballs are frozen and then place in freezer safe bags. Don’t forget to mark the date on the outside of the bag.  It is recommended one month in the freezer.

To reheat, let thaw and then reheat in the microwave or place on a baking sheet, cover with foil and bake until heated through.
