Healthy Chicken Meatballs Recipe made Ground Chicken, Curry Powder and Brown Sugar

Healthy Chicken Meatballs for an Easy Dinner or Snack or Topping for a Healthy Salad
- 1 lb. ground chicken
- 1 tablespoon olive oil
- 1 large egg
- 1 tablespoon brown sugar
- 1 teaspoon curry powder
- 1/2 teaspoon ground tumeric
- 1/2 cup breadcrumbs
- 1/2 teaspoon salt

Preheat oven to 375 degrees.

Gently mix everything together.

Using a tablespoon, measure out a level scoop of ground chicken meatball mixture.

Using the palm of your hands, roll mixture into small meatballs.

Spray a casserole dish or cookie sheet with nonstick spray and place meatballs on sheet.

Bake for 10 minutes, turn meatballs and bake for an additional 7-8 minutes.

This chicken meatball recipe makes about 24 small meatballs. Use a tablespoon size measuring spoon to measure out the correct portion of ground chicken. Level off one tablespoon of the ground chicken per meatball.

- If you want the meatballs browned a little on top, stick under the broiler for about 2-3 minutes.
- Don’t be tempted to over bake your meatballs as this will dry them out.
- If your hands get sticky, simply rinse with cold water.
