Ingredients

  • 1 lb. cod fish
  • salt & pepper
  • fresh lemon juice
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/3 cup shredded Parmesan cheese
  • 1/3 cup Panko Breadcrumbs

Instructions

  1. Preheat oven to 400 degrees.

  2. Lay a piece of foil on a baking sheet and spray with nonstick spray.

  3. Lightly squeeze fresh lemon juice on both sides of the cod and then lightly salt and pepper. Lay fish, skin side down on the foil.

  4. Mix together the mayonnaise and garlic powder. Spread a thin layer on top of the fish.

  5. Sprinkle fish with Parmesan cheese and then the Panko bread crumbs.

  6. Bake for about 15 minutes or until fish is cooked through. 

  7. Sate internal temperature for fish is 145 degrees.
