Why We Love Creamy and Delicious Instant Pot Mashed Redskin Potatoes

Is there anything better than creamy mashed potatoes? How about this easy Instant Pot Mashed Red Potato recipe that is creamy and delicious and definitely one of our favorite side dishes.  The Instant Pot makes quick work of mashed potatoes and when using this recipe, the potatoes don’t even need peeled!  It just doesn’t get any easier than that!

Now mashed potatoes are even easier to prepare using your Instant Pot! Make these yummy, mashed potatoes to go with your favorite beef, chicken or pork recipe.

If the Instant Pot is new to you, give a few easy recipes a try at first that only have a few ingredients. After a few simple recipes with success, move on to more recipes!

Ingredients Needed for Red Mashed Potatoes:

  • Red Potatoes – try to get potatoes that are the same size and organic if possible.
  • Garlic Cloves
  • Chicken or Vegetable Broth – Both will work well depending on if you want your potatoes to be vegetarian.
  • Cream Cheese
  • Butter – we use salted butter
  • Salt & Pepper – Don’t forget the salt & pepper!

Creamy and Super-Delicious Mashed Potatoes made with Red Potatoes using your Instant Pot.

Ingredients
  • 2 lbs. red potatoes, washed and cubed
  • 3-4 cloves garlic, peeled and chopped
  • 1 cup chicken or vegetable broth
  • 2 tablespoons butter
  • (4 oz.) cream cheese, cut into chunks
  • salt & pepper, to taste
Instructions
  1. Place potatoes, garlic, and broth in Instant Pot®. Season with salt and black pepper, to taste.
  2. Add the lid and flip pressure valve to “Sealing” position. Select the “Manual” option and adjust setting to “high.” Set cook time to 8 minutes. When finished, allow pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  3. Carefully open lid and add cream cheese and butter. Mash potato mixture with a potato masher or an immersion blender until blended, but not completely smooth. Season with additional salt and black pepper, to taste, and serve immediately. Enjoy!

Wash Your Redskin Potatoes Well

Leave the skins on the potatoes, but don’t forget to wash them well using cold water. You can also use a vegetable brush to make sure you get all the little nooks and crannies clean. Put potatoes in a colander and spray with cold water in your kitchen sink.

How Many Potatoes in a Serving?

  • Typically, 2 lbs. of red potatoes would be about 6-7 medium potatoes or about 12 small potatoes.
  • 2 lbs. of potatoes are typically 4 servings.
