Red Potatoes Made in Your Instant Pot –  Recipe for A Quick Dinner Side Dish

Just about everyone loves red potatoes as a side dish for dinner. Simple baby red potatoes with a little salt, pepper and butter. Sometimes simple is just simply delicious.

If you love simple, then you are really going to love these simple instant pot red potatoes. Looking for something quick & easy to go with those pork chops or fried chicken? Well these potatoes are perfect. Toss them in the pot and about 12 minutes later you have tender buttery red potatoes for a delicious dinner side dish.

Ingredients
  • 1-1/2 lbs. baby or petite red potatoes
  • 1/2 tablespoon sunflower oil
  • salt & pepper
  • 4 tablespoons chicken broth
  • 2 tablespoons butter, melted
  • 1/2 tablespoon dried parsley
Instructions
  1. Wash and dry potatoes.

  2. Using a small knife, poke a couple holes in each potato. (Do not cut potatoes in half.)

  3. Coat bottom of instant pot with sunflower oil.

  4. Lay potatoes in the bottom of the pot and sprinkle with salt and pepper.

  5. Add chicken broth to the pot.

  6. Seal the Instant Pot and make sure you turn the valve to "SEALING".

  7. Press the "PRESSURE COOK" button and set the time to 8 minutes.

  8. Once the potatoes have finished cooking, let them sit in the pot for about 1 minute.  Do a "QUICK RELEASE" and remove the lid.

  9. Remove potatoes to a dish or platter and drizzle with the melted butter. Sprinkle with dried parsley.

We love any potato as a side dish for dinner, but the baby red potatoes are definitely a favorite. They are so simple to prepare and easy to work with. They tend not to turn mushy and have a light and airy potato taste.

 

Hit The Pressure Cook Button on the Instant Pot

 

Hit the “PRESSURE COOK” button and set the time for 8 minutes. Red potatoes have thinner skins that many potatoes, so these potatoes do not require a long cooking time.

 

Baby Red Potatoes Takes About 8 Minutes in the Instant Pot

Once the pot heats up, you are only 8 minutes away from delicious baby red potatoes!

Yum – What to Serve with These Red Potatoes?

Don’t forget the sour cream and chives. Or sprinkle some lemon and feta cheese over the potatoes.

You can also sprinkle on cooked bacon bits and cheddar cheese for some bacon cheesy potatoes!
