Red Potatoes Made in Your Instant Pot – Recipe for A Quick Dinner Side Dish
Just about everyone loves red potatoes as a side dish for dinner. Simple baby red potatoes with a little salt, pepper and butter. Sometimes simple is just simply delicious.

You will love these Instant Pot Red Potatoes as a quick and easy side dish.
- 1-1/2 lbs. baby or petite red potatoes
- 1/2 tablespoon sunflower oil
- salt & pepper
- 4 tablespoons chicken broth
- 2 tablespoons butter, melted
- 1/2 tablespoon dried parsley

Wash and dry potatoes.

Using a small knife, poke a couple holes in each potato. (Do not cut potatoes in half.)

Coat bottom of instant pot with sunflower oil.

Lay potatoes in the bottom of the pot and sprinkle with salt and pepper.

Add chicken broth to the pot.

Seal the Instant Pot and make sure you turn the valve to "SEALING".

Press the "PRESSURE COOK" button and set the time to 8 minutes.

Once the potatoes have finished cooking, let them sit in the pot for about 1 minute. Do a "QUICK RELEASE" and remove the lid.

Remove potatoes to a dish or platter and drizzle with the melted butter. Sprinkle with dried parsley.
