Buffalo Chicken Meatballs Cooked in Your Instant Pot

Yum, buffalo chicken in a meatball! Now you can make these easy Buffalo Chicken Meatballs right in your Instant Pot or Pressure Cooker!

These meatballs are perfect for game night or party night when you need a tasty and filling appetizer.  Make sure to serve with plenty of crisp celery and tons of blue cheese dressing and ranch dressing for dipping!

Ingredients Needed for Buffalo Chicken Meatballs:

  • Ground chicken
  • Sugar
  • Dried parsley
  • Garlic
  • Breadcrumbs
  • Egg
  • Worcester
  • Buffalo sauce
  • Ranch dressing

Ingredients
  • 1 lb. ground chicken
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon sugar
  • 1 tablespoon dried parsley
  • 2 cloves garlic minced fine
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon of Worcester
  • 1/4 cup buffalo sauce more or less to your liking
  • Ranch dressing
Instructions
  1. In a medium sized bowl, mix together all of your ingredients for your meatballs.
  2. Using a spoon, or a cookie scoop, scoop out small portions of meat and roll into a ball using the palm of your hand. Make sure that you don’t make the meatballs too large, so they cook evenly.
  3. Place each meatball on your trivet that is covered in aluminum foil. Because the meat is a much leaner protein, using aluminum foil will make sure that they don’t fall through the trivet while cooking.
  4. Once all of your meatballs are formed into balls and placed on the trivet, pour one and a half cups of water into your instant pot. Place the trivet inside.
  5. Close and lock the lid on your instant pot and close the ceiling valve. Set your instant pot to high pressure for 7 minutes.
  6. Once they are done cooking, do a quick release by pulling the valve open to release the pressure. Transfer the trivet onto a plate or flat surface and allow them to cool.
  7. In a medium size bowl, place 1/4 cup (more or less to your liking) Buffalo sauce on top of your meatballs. Mix well until each meatball is coated in the sauce.
  8. Transfer your meatballs to your serving dish. You can serve with ranch sauce on the side, or you can squeeze ranch dressing on top of each meatball. Enjoy!

This is a delicious and fun appetizer to serve at parties or holidays. You can also serve these meatballs for dinner, just serve with a healthy side salad or green vegetable of choice.
Serve with celery and carrot sticks and plenty of Ranch dressing.

How to Make Your Own Delicious Homemade Hot Sauce –

6 Tablespoons Frank’s Hot Sauce
4 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon garlic powder

Mix in a small dish and microwave for 30 seconds or until hot.

Can I Bake these Instant Pot Buffalo Chicken Meatballs in the Oven?

Yes,  for easy Oven Roasted Chicken Meatballs – Bake on a rimmed baking sheet at 400°F for 15 minutes or until cooked through.  Prepare the simple hot sauce and coat the meatballs in zesty sauce.  Add the Ranch dipping sauce and you have delicious meatballs.
