Skillet Creamy Salmon Recipe

This Creamy Salmon Recipe is so easy because it uses canned mushrooms and some fresh cherry tomatoes!  Add a little bit of cream and thyme and you have a super quick meal on the table in no time!  Healthy and delicious salmon cooked in a quick creamy sauce.

We love eating wild-caught salmon a few times a month for the health benefits of eating fish. If you want to try something a bit different than plain skillet fried salmon, try this recipe that uses quick ingredients with little fuss.

Health Benefits of Salmon: Nutritional Benefits – A  3-4 oz. serving of salmon is about 200 calories. Salmon is naturally low in saturated fats and a good source of protein. It’s also one of the best sources of vitamin B12. It’s also bursting in potassium and other nutrients like iron and vitamin D.  (Webmd)

Ingredients Needed for this Skillet Salmon Recipe

  • Fresh Salmon – try to purchase wild-caught vs. farmed raised
  • Olive oil – Extra Virgin
  • Low fat cream – or can use regular heavy cream
  • Can of mushrooms – whole or sliced is fine
  • Cherry tomatoes – fresh cherry tomatoes
  • Dried thyme
  • Fresh herbs for serving – basil is a great choice

How to Prepare Skillet Salmon:

Step 1. Wash the pieces of chilled salmon and pat dry with paper towels.  Spread fish with a little of the olive oil, sprinkle with thyme, salt and pepper.

Step 2.  Heat the remaining olive oil in a frying pan. Place the salmon skin side up and fry over medium heat for 2 minutes. Carefully flip the pieces over and fry on the other side for another 3 minutes.

Step 3. Transfer the fried fish to a plate. Put the mushrooms and tomatoes into the pan. Fry for 3-4 minutes on medium heat, stirring occasionally.

 

Step 4. Pour the cream into the pan, stir and turn down the heat. Wait 2-3 minutes. If the cream is too thick, add some water.

Step 5. Transfer the salmon pieces to the skillet and simmer in the creamy mushroom sauce for another 5-6 minutes. Cover the pan with a lid.

Step 6. Drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and leave for 2-3 minutes.

Step 7. Carefully transfer the fish to a plate and serve with fresh herbs, remaining sauce, mushrooms.
