Sausage and Lentil Stew – Healthy and Easy Soup for a Great Family Meal

- 1/2 lb. turkey or chicken sausage, casings removed and crumbled
- 1 tablespoon olive oil
- 1 small onion, diced fine
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 8 cups chicken broth, divided
- 1 (15 oz.) can diced tomatoes
- 1 cup dried green or brown lentils, rinsed
- 1 teaspoon dried thyme
- 2 cups fresh spinach, cleaned and chopped
Using a soup pot or stockpot, saute onions in olive oil for about 2 minutes or until they start to get tender.
Add sausage to the pan and continue to saute breaking up sausage with a spatula as it cooks.
Add garlic to the pan and continue to cook for another minute.
Add everything to the pan with the exception of 1 cup of chicken broth and the spinach.
Stir to combine and simmer for 35-40 minutes or until lentils are tender. Add the spinach 15 minutes before the finished cooking time.
Serve your Sausage and Lentil Stew with a healthy tossed salad and rolls with butter.
