Notes: You can make this in the slow cooker too! Cook on high for 3 hours, or low for 6 hours. Add the cornstarch, milk, and Velveeta just before serving.
Ingredients Needed for Velveeta Cheeseburger Soup:
- Bacon
- Ground beef – extra lean works well for this recipe
- Onion – white onion
- Butter – salted butter
- Clove of garlic
- Dried parsley
- Dried basil
- Russet potatoes
- Chicken broth
- Milk
- Cornstarch
- Velveeta cheese
How to Prepare Cheeseburger and Potato Soup:
Step 1. Add bacon pieces to a medium sized pan. Cook over medium heat until crispy, stirring as needed.
Remove bacon from the pan and drain grease.
Step 2. Add the ground beef, break into pieces, and cook until browned. Drain grease.
Step 3. Raise heat to medium-high, then add the onion, and cook for about 5 minutes.
Step 4. Add the butter, then stir in minced garlic, and the rest of the seasonings. Allow to sauté for about 2 minutes.
Step 5. Add the cooked bacon, potatoes and chicken broth, bring to a light boil. Reduce heat, cover and simmer for 15 minutes, or until potatoes are tender.
Step 6. Add the cornstarch to the milk and whisk until dissolved. Stir mixture into the soup.
Step 7. Add the cheese and stir until melted.
Serve hot, and enjoy!
Once you get the bacon and ground beef cooked the rest of the soup making process is fairly easy. You can peel the potatoes ahead of time and just leave them in some cold water in the refrigerator until you are ready to prepare the soup. You can leave peeled potatoes in water for about 24 hours in the refrigerator.
