Instant Pot or Pressure Cooker Baby Potatoes “Mini Potatoes” made with small yellow baby potatoes are a tasty side dish for most beef, chicken and fish dinner recipes.  These mini potatoes Instant Pot get on the dinner table quickly by using your Instant Pot to cook.  Baby potatoes are one of our favorite side dishes for dinner.

Easy and Delicious Instant Pot Baby Potatoes Recipe

You’re going to love how quick and easy it is to make these yellow baby potatoes in your instant pot pressure cooker! Just add a little butter and parsley and you have a delicious side dish for dinner.

There are many ways to jazz up these potatoes once they are cooked –

  • Mix 1/2 teaspoon of  garlic power with 2 tablespoons melted butter. Drizzle over potatoes.
  • Serve with sour cream and chives.
  • Melt shredded cheese over top.
  • Garnish with a tablespoon dried chives.
  • Serve with beef or chicken gravy.
  • Serve with fresh Ranch dressing

Ingredients Needed:

Baby Potatoes – if possible look for organic potatoes (mini potatoes are typically in a bag)
Vegetable Oil
Salt & Pepper

How To Cook Baby Potatoes in Your Instant Pot –

1. Make sure your potatoes are clean and dried. Cut each baby potato in half using a sharp knife. Use 1-1/2 lbs. baby potatoes in your 6-quart Instant Pot.

2. Add 3 tablespoons vegetable oil to the bottom of your pressure cooker, stir to coat. Press the “Saute” Button. Add the sliced baby potatoes to the pot and lightly salt and pepper. Using a spatula, saute the potatoes for about 3-4 minutes.

3. Add 1 cup of water to the Instant Pot with the potatoes. Lock the lid and cook on manual HIGH pressure for 5 minutes

4. When the cooking time is up, do a quick release to release all pressure. When pressure is released, remove the lid and drain the potatoes. You can return the potatoes back to the pan and saute for about 2-3 minutes. This will dry the potatoes and remove any excess moisture. Drizzle with melted butter and garlic powder. Enjoy!

 

Instant Pot Baby Potatoes

Using the “SAUTE” function, cook the baby potatoes in oil for about 4 minutes. The potatoes we use in this recipe are small baby potatoes, so cooking time on high pressure may vary for slightly larger potatoes.

Wash Baby Potatoes Before Cooking

Wash mini potatoes in your sink with cold water. It’s easier to use a colander and let the potatoes sit for a minute to dry. Spray with cold water and shake the colander to rid of excess water.

Baby Potatoes make a great side dish for just about any meat entrée. Serve baby potatoes with your favorite beef, veal or chicken recipe.

What to Do With any Leftover Baby Potatoes?

Simply store in your refrigerator in an airtight container for about 4-5 days and reheat in the microwave when ready to eat. Leftover potatoes heat up well and are just as delicious the next day.

Are Baby Potatoes Nutritious?

Potatoes are a higher-calorie carb, but are still considered to be nutritious since -hey contain lots of fiber, potassium, magnesium and vitamin C and B.  Cooked potatoes are a healthy choice for a side dish for dinner.
