Ingredients

  • 1-1/2 lbs. Baby Yellow Potatoes
  • 3 tablespoons vegetable oil
  • salt and pepper
  • 1 cup water

Instructions

  1. Make sure your potatoes are clean and dried. Cut each baby potato in half using a sharp knife. Use 1-1/2 lbs. baby potatoes in your 6-quart Instant Pot.
  2. Add 3 tablespoons vegetable oil to the bottom of your pressure cooker, stir to coat. Press the "Saute" Button. Add the sliced baby potatoes to the pot and lightly salt and pepper. Using a spatula, saute the potatoes for about 3-4 minutes.
  3. Add 1 cup of water to the Instant Pot with the potatoes. Lock the lid and cook on manual HIGH pressure for 5 minutes
  4. When the cooking time is up, do a quick release to release all pressure. When pressure is released, remove the lid and drain the potatoes. You can return the potatoes back to the pan and saute for about 2-3 minutes. This will dry the potatoes and remove any excess moisture.
