In our Dinner Planner kitchen, we love making this easy Chicken Cacciatore—it’s a timeless favorite. Start with some tender chicken thigh pieces, tomatoes, and a medley of  peppers, mushrooms and spices. Sauté them all together in a pot with some garlic and olive oil. The origins of Chicken Cacciatore

Chicken Cacciatore, also known as “Pollo alla Cacciatora” in Italian, has its roots in the rustic countryside of Italy. The term “Cacciatore” translates to “hunter” in English, and the dish is believed to have been developed by Italian hunters who would cook their freshly caught game with local herbs and vegetables. Over time, the dish evolved to include chicken as a more readily available and affordable meat option.

Easy Chicken Cacciatore Recipe

Chicken Cacciatore is a rustic and flavorful Italian dish sometimes referred to as “Hunter’s Stew”. Tender chicken simmered in tomato sauce, red wine, capers, vegetables, and seasonings is comfort food at its best; and just like spaghetti sauce, or pasta fagioli, every Italian family has its own version. Chicken thighs are recommended for their cost and flavor, but chicken breasts may be substituted if preferred.

Ingredients Needed For Easy Chicken Cacciatore:

Chicken Cacciatore Ingredients

  • 6 bone-in, skinless chicken thighs ( Can use boneless chicken breasts)
  • 3 tablespoons extra virgin olive oil, divided
  • 1 large yellow onion, thinly sliced
  • 8 oz. fresh mushrooms, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup dry red wine
  • 2 14-oz. cans crushed tomatoes, undrained
  • 1/2 teaspoon dried oregano
  • 1/2 cup black olives, pitted and halved
  • 2-3 teaspoons capers
  • 1/4 cup fresh parsley, roughly chopped
  • Sea salt and black pepper, to taste

How to Make One-Pot Easy Chicken Cacciatore:

STEP 1. Heat 2 tablespoons olive oil in a large high-sided skillet or Dutch oven over medium heat. Add chicken thighs and sear on all sides until a golden crust forms, 4-5 minutes. Season generously with salt and pepper on all sides.

STEP 2. Remove the chicken thighs from the skillet and set aside on a plate.

STEP 3. In the same skillet, add onions and mushrooms and season to taste with salt and pepper. If necessary, add an additional 1 tablespoon of olive oil.

STEP 4. Cook until the onions become translucent, and the mushrooms soften, approximately 4-5 minutes.

STEP 5. Add garlic and bell pepper and continue cooking for another 2-3 minutes.

STEP 6. Add wine, crushed tomatoes with their juices, oregano, red pepper flakes, olives, and capers. Stir to combine. Bring the sauce to a gentle simmer over medium-low heat.

STEP 7.  Add the chicken and any accumulated juices back to the sauce and cook until the chicken is cooked through and the sauce is slightly thickened, approximately 30-35 minutes.

STEP 8. Remove from heat and stir in the fresh parsley. Taste and adjust the seasoning as desired.

Serve over cooked spaghetti. Enjoy!
