Ingredients Needed For this Pasta Penne Recipe with Sausage and Tomatoes
- Penne pasta noodles
- Olive oil
- Mild Italian sausage links – choose your favorite brand of sausage.
- Garlic cloves
- Sweet onion
- Canned diced tomatoes (regular or Italian seasoned work)
- Tomato sauce
- Parmesan cheese
- Dried basil
- Heavy cream
- Fresh spinach
How to Make this Delicious Pasta Penne Recipe
STEP 1. In a large skillet with a lid, heat the oil over medium heat. Add in the onions and garlic and cook for 3-4 minutes until the onions begin to turn clear.
STEP 2. Add in the Italian sausage slices and turn the heat up slightly (just above medium). Cook 10-12 minutes until all of the slices are browned on the outside and the sausages are mostly cooked through.
STEP 3. Add in the canned tomatoes, tomato sauce, water, basil and salt. Stir well. Mix in the noodles and cover. Within 1-2 minutes the mixture should be covered and boiling slightly. Cook at a small boil for 10 minutes.
STEP 4. Uncover and stir. Leave the lid off and cook for another 12-15 minutes or until noodles are tender. If you find the sauce getting too thick, add in 1/8 cup of water and keep at a boil. In the meantime, chop your spinach.
STEP 5. Once the noodles are tender, stir in the heavy cream, parmesan, and spinach. Turn off the heat.
STEP 6. Let sit for 3-5 more minutes for the sauce to turn creamy. Serve and enjoy!
For this pasta recipe, use the smaller link sausages. Cook the sweet onion, garlic and sausages all together.
You can use penne pasta for this recipe or substitute medium shells, orecchiette, or bow tie pasta. A smaller pasta works well in this pasta dish.
Use fresh cream or if there are any dairy allergies use coconut milk as a substitute.
