What Exactly is Pomme Duchesse

Pomme Duchesse, translated from French as “Duchess Potatoes,” is a classic and somewhat sophisticated potato dish that elevates our favorite spuds into a culinary work of art. Originating from French cuisine, Pomme Duchesse is renowned for its elegant appearance and delicious taste. These piped potatoes make an awesome presentation for your holiday table!

To create Pomme Duchesse, mashed potatoes are skillfully piped or shaped into individual portions and then baked until they develop a golden and crispy exterior. The result is a combination of creamy interiors and a delicious, slightly crunchy outer layer.

Simple Ingredients Needed for Pomme Duchesse Potatoes

  • 2 lbs. yellow potatoes – Yukon Gold
  • 3 egg yolks
  • 1/3 cup heavy cream
  • 4 tablespoons butter
  • nutmeg – this is optional and only a “pinch” of nutmeg
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • dried parsley

How to Make this Easy Pomme Duchesse Recipe

Step 1. Start by boiling a medium pot of water with a dash of salt.

Step 2. Peel the potatoes and cut them in fours or chunks. Cook the potatoes for about 25 minutes, or until fork tender.


Step 3.  Preheat your oven to 400 degrees Fahrenheit and prepare a baking tray with nonstick spray.

Step 4. Once the potatoes are cooked, drain them, and let them cook off for about 5 minutes. Then add to a medium sized bowl.

Step 5. To the bowl of potatoes, add the heavy cream, salt, pepper, and half of the butter. Put the remaining butter aside.
Mash the potatoes until smooth.


Step 6.  Add the egg yolks and mash some more, but make sure not to overdo it. Add a pinch of nutmeg if using.

Step 7. Put the mashed potatoes in a piping bag with a star tip. Pipe the potatoes onto the prepared baking tray like an ice cream swirl.

Step 8. Then melt the remaining butter in the microwave for 20-30 seconds and brush it onto the potatoes.
Step 9.  Bake in the oven for 25-30 minutes or until golden brown. Sprinkle with parsley. Enjoy!
