Simple Deviled Eggs with Ham and Asparagus

Simple Deviled Eggs with Ham & Fresh Asparagus

These deviled eggs are perfect for Easter or any holiday that you want to make things a little special. Classic deviled eggs are delicious enough, but these ham & asparagus eggs put the D in Deviled and Delicious!

Everyone loves deviled eggs, but the addition of ham takes them over the top. You can leave out the asparagus if you like, but don’t leave out the ham bits.

These Eggalicious creations are also perfect for picnics or healthy afternoon snacks.

Make sure you choose the best possible eggs.   And here is a quick lesson on how to boil eggs to make hard boiled eggs.

Choosing quality eggs and cooking them correctly will ensure that your deviled eggs will be consistently delicious.

This recipe works very well with leftover ham and asparagus.  Make sure to put Fresh Asparagus with Hollandaise  sauce on your Easter table this year!

Ingredients
  • 6 medium eggs - hard boiled
  • 2-3 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • salt & pepper
  • 2 cooked stalks of asparagus, chopped fine
  • 1/4 cup finely diced ham
Instructions
  1. Slice the eggs in half lengthwise and gently remove the cooked yolks.
  2. Place yolks in a small to medium bowl, and place the whites on plate.
  3. Mash the yolks using a fork. Add mayonnaise, mustard, salt, and pepper, and mix well.
  4. Gently fold in the ham and asparagus.
  5. Fill each egg white with small spoonfuls of filling.
  6. Place on a pretty serving platter.
