Ingredients

  • 2 lbs. yellow potatoes
  • 3 egg yolks
  • 1/3 cup heavy cream
  • 4 tablespoons butter
  • 1 pinch nutmeg (optional)
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Start by boiling a medium pot of water with a dash of salt.
  2. Peel the potatoes and cut them in fours or chunks.
  3. Cook the potatoes for about 25 minutes, or until fork tender.
  4. Preheat the oven to 400 degrees Fahrenheit and prepare a baking tray with nonstick spray.
  5. Once the potatoes are cooked, drain them, and let them cook off for about 5 minutes. Then add to a medium sized bowl.
  6. To the bowl of potatoes, add the heavy cream, salt, pepper, and half of the butter. Put the remaining butter aside.
  7. Mash the potatoes until smooth.
  8. Add the egg yolks and mash some more, but make sure not to overdo it.
  9. Put the mashed potatoes in a piping bag with a star tip.
  10. Pipe the potatoes onto the prepared baking tray like an ice cream swirl.
  11. Then melt the remaining butter in the microwave for 20-30 seconds and brush it onto the potatoes.
  12. Bake in the oven for 25-30 minutes or until golden brown. Enjoy
