Easy Twice Baked Potato Recipe

Twice Baked Potatoes are pure comfort on a dish. Like a warm hug and a big smile, these cheesy bacon oven baked potatoes are pure joy in the world of food.  All of our favorites wrapped into one potato. Fluffy baked potato filling, crispy bacon and lots of cheddar cheese all baked twice to perfection.

How to Make Easy Twice Baked Potatoes

One of the best things about this easy potato dish is you can serve these potatoes with just about anything. You can have these potatoes for a nice lunch with a bowl of soup or a salad.  Cheesy potatoes goes well with just about any meat you cook for dinner. Or, serve the potatoes with a big bowl of cream of broccoli soup and skip the meat.

It Only Takes a Few Ingredients to Make Twice Baked Potatoes

  • Baking potatoes – we use 4 large Russet potatoes
  • Sour cream – full fat sour cream  – 1/2 cup
  • Milk  – whole milk – 1/4 cup
  • Bacon –  6 strips of your favorite bacon
  • Olive Oil  – 2 tablespoons
  • Butter – we love to use salted butter – 2-3 tablespoons
  • Shredded cheddar cheese – 1 cup
  • Scallions – 2
  • Salt and pepper to taste

How to Make Easy & Delicious Twice Baked Potatoes

Step-by-step:

1. Preheat your oven to 400°F

2. Wash and scrub the baking potatoes thoroughly. Pat them dry with a paper towel and prick them with a fork a few times to allow steam to escape during baking.

3. Rub the potatoes with oil and sprinkle with salt. Place them directly on the oven rack or on a baking sheet. Bake potatoes for about 45-60 minutes, or until they’re tender when pierced with a fork. Remove potatoes from the oven and let them cool slightly so you can handle them.

4. Cut each potato in half lengthwise. Carefully scoop out the insides, leaving a thin shell to hold the filling.

5. In a mixing bowl, mash the potato insides with a fork or potato masher. Add the sour cream, milk, butter, half of the crumbled bacon, half of the shredded cheddar cheese, half of the chopped scallions, salt, and pepper. Mix well until the ingredients are combined and the mixture is creamy.

6. Spoon the potato mixture back into the potato shells, mounding it slightly.

7. Top each potato with the remaining shredded cheddar cheese and crumbled bacon. Place the potatoes back in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

8. Remove the potatoes from the oven and sprinkle with the remaining chopped scallions. Let the potatoes cool for a few minutes before serving. Enjoy your delicious homemade twice-baked potatoes!

The best potato for twice baked potatoes is typically a russet potato. Russet potatoes have a high starch content and a fluffy texture when baked, making them ideal for creating a light and creamy mashed potato filling. The skin of russet potatoes also crisps up nicely during the second baking, adding a delicious contrast in texture. Russet potatoes would be our pick for the best to use.

Can You Freeze Twice Baked Potatoes?

Yes, After baking and filling the potatoes, allow them to cool completely before freezing.
Make sure to wrap each individual twice baked potato tightly in plastic wrap. This helps prevent freezer burn and keeps the potatoes fresh. Put them in a freezer safe bag and freeze for up to 3 months.

You can also flash freeze the wrapped potatoes on a baking sheet for a couple of hours. This prevents them from sticking together in the freezer.

When you’re ready to enjoy the twice baked potatoes, thaw them in the refrigerator overnight.  Reheat using the instructions below.

How to Reheat Twice Baked Potatoes – Oven and Microwave

Oven Method:

Preheat your oven to 350°F (175°C).
Place the twice baked potatoes on a baking sheet.
Heat potatoes in the oven for about 15-20 minutes or until they are heated through.
For the last few minutes, you can broil them briefly to crisp up the top if desired.

Microwave Method:

Place the twice baked potatoes on a microwave-safe plate.
Microwave on medium power for 2-3 minutes.
Check the temperature, and if needed, continue microwaving in 1-minute intervals until the potatoes are heated through.
